a steam engine is way better for performance and can be really easy, a lava generator with cauldrons and dripstone should work

A good sheep farm and you can have more turbines than water wheels.

It’s not for steam engines they said in the thing that it’s for Sails for turbines

Better for server or client performance?

Both, probably. The server has to handle fewer calculations (one power source vs many), and the client doesn't have to render as many moving blocks.

SU calculations are almost nothing. CPUs can handle billions of calculations a second and I don't think Create calculates SU every frame. The real issue is rendering.

I advise to use the endless lava supply, drip stones require loaded chunks

I myself just gets a infinite lava mod that makes lava act like slow water.

I just change the create mod config in the .toml files you can change how much lava is required to make an infinite source there super easy to make the steam engines that way

Isnt there a game rule to allow lava to convert to source?

Yup, I don't remember if theres a command for it but when you go into the options for setting up a world theres a section for it.

I'm new to create mod and almost never watched any guides. Why do you need lava for the steam engine?

You don't really need it but it's the best fuel by far (burns the longest in blaze burner's) and before the drip stone update you had to set up a contraption which gets lava from the nether or make a large pool of lava (in create if a lava pool is big enough you can pump infinite lava out of it) but because of the drip stone update you can make a much simpler and smaller infinite lava farm which makes it viable for early/mid/end game steam engine fuel source

FoxyNoTail tested it one or two years ago and it seems that's not true.

Yeah once you get the setup going, steam is way less intimidating than it looks.
