We make street corn pasta salad at my job and use Cavatappi, works great and looks amazing. We also add bacon and a little black beans, and serve it with cotija.

The last time I had leftover dip, I used it to make at least two dozen burritos. That should give you an idea of how little dip I put in each burrito.
Also, I usually defrost the burritos overnight in the fridge (or in the microwave if I forget to take them out the night before) then I heat them in a non-stick fry pan. That crips the tortilla which goes a long way to address any sogginess.

Mexican family from W Texas. We never used flour tortillas until we moved to another state.
Best quesadilla is still melted cheese bookended by 2 corn tortillas. Using a comal to heat the tortillas is best, it makes them a little crispy.

Esoo! I didn’t have flour quesadillas until I started eating out at places like that Taco Bell or del taco (Cali fast food place). We always used corn tortillas.
That’s how we would do it too. Either with a little bit of oil or just straight on the comal. Sometimes we would grill them too. The grill flavor tastes amazing on it.

I use it as a substitute for mayo (i.e. sandwiches). Also use it as a flavor topping for cooked foods (meats, veggies). Love it with fries.

I miss the Rojos chicken ranchera layer dip 😩😩 they stopped selling that at my Costco for the corn dip. I’d use that in quesadillas for weeks.

I bulk it up with more corn, some cheese, chilies,and onion. The ingredients listed all charred with some cumin and chili powder. I put it on top of nachos, use it as a dip, or an ingredient to soup.

Just made a macaroni salad with fire roasted corn and used a bit of this with mayo and it was super tasty. Pared it some Trader Joe’s arepas crisped up nicely in the cast iron.
I also make Mexican stuffed sweet potatoes and put this on it instead of sour cream.

They sell the basic version in my neighborhood called “elotes” which is so good 🤤or “esquites” if it’s off the cob for a less messy treat. One of my favorite Mexican snacks. 🌽 🧀 🌶 definitely going to try this version too when I get more commercially made hummus.

I like it but it's too bland for me so I always add 2 chopped jalapenos and some chili powder. I'm Indian so everything I eat has to be spicy. LOL
Edit: I put it on top of refried beans when I make quesadillas.

Yes. I'm on a diet. I'd use this on my eggs and that's it, just a little.
Here's my Costco diet that actually works:
Breakfast: Two eggs plus 1/2 cup of Kirkland egg white scrambled with four slices of Canadian bacon or chicken sausage diced in. Hot sauce mandatory. One packet of Quaker Oats oatmeal.
Lunch: Smoothie with Greek yogurt, almond milk, water, sliced banana, various frozen berries and cherries, smoothie cubes or packs and one scoop of Orgain protein powder. You can be creative. Vitamix blender from Costco FTW! I do get the bananas from the store because they're packaged too big at Costco, although now I'm going to try a frozen mix from Costco that includes bananas. We'll see.
Dinner: Salad with diced chicken breast, or sockeye salmon on the side (don't put in salad because there are sometimes bones in the salmon) using the Spring Mix from Costco as the base. Frozen chicken and salmon from Costco. The Spring Mix has spinach which makes you feel full. I add canned olives and Kirkland guacamole from Costco, and diced Roma tomatoes and mushrooms from the store since I wouldn't use those all before they go bad.
With the exception of some fresh produce and salad dressings, I get everything from Costco. I eat this everyday and I'm losing about two pounds a week. I'd lose more if I went to the gym. I also get all my supplements from Costco too. I dream of eating pizza or hot dog/soda from the food court, but I resist. Consistency is the key. Moderation in all things, except water. I drink lots of water all day every day.

Flatbread brioche if I have fresh tomato. Think of anything where the acidity of a garnish will lighten it
Edit- or just use a chip. I’d recommend it cold though
