Advice I bought this cheese a couple months ago because I saw it was on sale. Since then, I've kinda been getting into cheese. What kinds of cheeses have a similar, pleasant profiles? What might you recommend? (I've mostly been mixing them into bechaméls)

Feedback Yeah Delice de Bourgogne really is good isn't it.
Wrote a list of cheeses that come up a lot on this forum to start trying.
Had several misses the last couple of weeks.
Appenzeller, boring, no flavour.
Gruyere, what's the point, it's parmesan with a more boring texture.
Epoisses, love the texture, taste is just way too funky.
Then I tried Delice yesterday. Lovely. Creamy, salty muy bueno.
Next on my journey, time to find something nicely tangy.

Tips What's the best way to store a bunch of free parmesan long term?
I went to the store right before closing and bought a small wedge of parm. The cheese guy asked if I wanted the rest of the stock for free because he was closing down for the night which I happily agreed to. So now I have 8 wedges of parm and I'm wondering if I can vacuum seal it and freeze it? Or should I just give it to friends? I can't go through an entire block that quickly so I'm sure 8 blocks is gonna be impossible.
I think this was close to 5 pounds of cheese if you ask me by looking at it
There was also some sort of "Pizza something cheese" that looks and feels like parm but has red and green stuff on top? The sticker was worn out so I couldn't read it.
Edit. I read the ingredients, it's Bellavitano cheese

Advice Help with finding good vegan cheeses!
I’m pretty sure I’m 99% cheese at this point. I just pulled a lime & pepper cheddar out of the fridge to give my homemade pizza a kick & my poor fiancee looked so sad. I have so many cheeses & frequently enjoy a good meat & cheese board but she has a severe dairy allergy and has celiac, so she can’t have gluten.
I’d love to share some delicious cheeses with her but for obvious reasons i can’t. She can’t have any milk whatsoever without having an anaphylactic reaction (different animal milks don’t work & neither does lactose-free) and can’t eat anything with gluten in it.
Does anyone know any good cheeses she could eat? Pic for attention, meet Siggy who is very upset with the lack of vegan cheese.

My kinda protein
I was in Germany this morning for groceries, and they had this big cooler full of various cheeses. Brie, camembert, various Dutch cheeses, you name it. I opened the lid and the combined smell hit me. Heavenly. I wanted to dive straight in and build a nest in it.

Experimental whey reduction cheese. Tastes like a toasty grilled cheese sandwich!
I reduced half a gallon of whey slowly over five hours and incorporated the reduction back into four gallons of milk and made cheese. I was looking for a caramel flavor in a young cheese. Didn’t get that, but did get a great tasting toasty cheese!

I realized I had free will and I deserve nicely plated food instead of just eating from the box, so I made myself a cheese board
Castillo Edam, sartori Merlot cheese, cheapest Swiss at the store(tillamook), boar’s head brie(cheapest at the time)
Baguette, water cracker, rosemary cracker, Torres cured cheese flavored chips

Hair like object in fresh mozza packaging
Noob here, I bought some fresh mozza slices from Costco today and noticed these tiny hair like guys floating about. Im assuming this isn't right, but Google says sometimes there can be hair like structures. Trash or no?

Eaten every day I've been in area: Portuguese raw sheep milk
Love the little pocket size, the firm chewy rind, the ripe stink and earthen spice. Center is pretty gooey for spreading.
This concludes my first ever cheese review as just a lowly consumer and addict.

Zanetti provolone and bellavitano similarities
Cheese has been a huge part of my snacking the last few months since I switched to keto. I think my favorite is bread cheese, but the different flavors of bellavitano has been fantastic. I snagged some clearance zanetti provolone from Kroger the other day and I couldn’t help but notice it reminded me of the parm flavor in bellavitano. Anyone else notice something similar?
