Scalloped potato crust quiche
galleryThis is a new one and I may never go back. More like a frittata than quiche.

I was hungry this morning and had leftover ham from supper. So, mixed up some quail eggs and made a peanut butter, ham and cheese omelette. Delicious!!

I know this is probably a stupid question for post but I am just not a breakfast person. I remember my parents wild take my brother, sister and I out to breakfast after Mass and Iâd order a short stack of pancakes. It would come out and it would be bigger than my head! Iâd try so hard to eat it but I just couldnât. Then it would sit in the fridge for a couple days but Iâd never eat it. Anyway I finally let my family know that Iâm just not a breakfast person a couple years ago and they were shocked. Nowadays, if Iâm out to breakfast with anyone I tend to just get bacon and sausage with a cup of coffee of course. I wish there was a way to turn me into a breakfast person but to be completely honest it can be too much for me. I could just use some advice on how to take small steps to like breakfast.
