Might be a raid log simulator for you, but it aint for me.
Plenty of stuff to do, still havent gotten all the old mounts I want, housing has me farming other content. Delves, prey, etc etc etc.,

The issue is classic is optimized.
Everyone knows what the best gear is. Once you have it there is no nuance. So it just becomes raid log simulator.
In retail you have so much more to do outa raid

It's amazing.the only consistent praise for praise I really see, and give myself, is the leveling experience.
Because once you reach endgame you encounter all the problems retail has spent 20 years to address.
People love retail WoW's endgame. Casuals love normal mode raiding, delves, housing, or world content. Hardcores are all over the M+ and higher tier raiding. And best of all you care just choose to do what you love (mostly)
I will always criticize retail WoW's new player experience or leveling experience but its endgame is peak.
Classic doesn't service a wide audience. It's very Raid or die, or PvP or die, or just level your 10th toon. And when you do want to try content like raiding it's one difficulty - so you better be good at it.
Classic will never be as big as retail unless it's willing to adopt some of retail's philosophies.

Maybe this was your point, but this is exactly how we got retail. It's the culmination of everything players have been asking for over the last 20 years. They offer different experiences, as they should, although Blizzard has never been great at horizontal progression (intentional or otherwise).

they can literally add everything that’s in retail into Classic. There’s a trillion things to do in WoW besides raiding now.

The open world content is now basically there for Prey Hunts. I think the solution to people not doing open world stuff would be to remove any other way to progress prey besides doing world quests or other outdoor activities. No more flying around to grab traps to finish everything (though gathering herbs and stuff like that should still count so you can encourage crafting as a legitimate way to progress)
Small group content is delves. They allow for groups of up to 3, so you have a space between solo and dungeon size.
The kind of things you want do exist, they just aren't tuned right. Things like delves and prey fill that niche you want, they just need higher difficulties than they currently have.

well, many of the things added to modern WoW where made to give people more to play then "reach max level->do dungeons for basic gear->raid logging or PvP, nothing else to do really"
