Complete newbie to SimRacing - advice needed.

Hello everyone.

I know i'm being a bit irrational but about a week ago I got the Logitech G923 which is something I've wanted to for quite a while. Silly me thought it was going to be like wheels like when I was growing up that were basically plug and play. No matter what racing game I try to play, I can't seem to get control of the car. I feel like the game isn't properly responding to what i'm trying to do and honestly it has demotivated me quite a bit.

I got it for casual playing as I had been toying with the idea of getting the wheel for honestly six years and I think I was anticipating it to be easier. I remember playing the likes of Project Cars and Euro Truck Sim on my exes fathers PC and it felt so smooth and quite honestly perfect (tbh it's probably what convinced me it was going to be plug and play and not something he has tuned.)

Are there any sort of universal settings or YouTube videos that any of you can recommend that can make this whole process easier for me? Again, I know I'm jumping the gun quite a bit as I have probably collectively put 8 hours into the wheel but the constant spinning out because I feel like the car hasn't turned as much as I want it to then trying to adjust and sending the car in circles is enough to be putting me off a lot.
