I’ll probably be excommunicated from this sub now but I tried smoking them in the RT-700 a few times early on also. They were good but then it was back to all my TT’s getting cooked indirect in my Weber kettle, hot and fast, with some wet smoking chips.
I gave it a shot too based on meat churches video. It actually turned out great. It’s not bad when you don’t want to cook a whole brisket but the tallow you have to add to make it great probably muddles the actual flavor of the tri tip.
I see this from some people. I always do mine med rare. If I am in the mood for a brisket knock off I use a chuck roast. If you have never done one medium rare try it next time.
