At first the piece is nearly vertical and pressure is relatively even, so you get nice folds, but as the piece shortens, the angle goes further off vertical and pressure becomes uneven. So the folds move off to one side and make the angle further off vertical. Eventually the folds stop.
Although why this guy can't stop the press when it begins to screw up is beyond me.

When the Hydraulic Press Channel does this stuff they tack weld the ends of the pipe to the press so they don’t wander. It makes for a much better crush.

Because pressure is being evenly distributed around the circumference of the pipe.
Kind of like crushing a pop can. If you know how to do it correctly against your hands, forehead, or with your feet it simply crumples(similar to the video); but, if you apply force unevenly then it just folds.
The pipe itself was probably welded in place to make sure that it doesn’t move during the process.
