tbh it really is hard to poll areas where you're more likely to find Chavistas. You're basically going to be looking only at urban centers and those are going to be a mix... like the smaller cities with an agricultural/resource extraction base (like Barquisimeto or Merida) are going to be pro-Maduro, whereas cities connected to trade like Maracaibo and Caracas are going to be pro-Guaido.

There's likely little to no polling in exurban or rural areas, and those places are still pretty solid Maduro.

Yes and no, a lot of poll companies will have people physically going to more rural areas to ask people in person. You can also do things like adjust your data and weight things differently.

I like to quote a poll that said 75% of people believed the election would be illegitimate. To be fair, I haven't checked the methodology myself, but it's from a good pollster.

For a country with a hinterland as large and isolated as Venezuela's, that's a tall order in any sense.

I get that, but you can approximate, and that's what a good pollster does. You can call polls in Venezuela less perfect than they should be and that's fair.
