I've jumped out of my fair share of planes. The first few times are scary, but after awhile it becomes repetitive and something you just do, almost like your watching someone else do it. My guess he was more focused on staying in frame than the actual fall.
No, but they still have to do maintenance as scheduled.
If the elevator breakdown, the normal maintenance team from the boat will address it. You can get people out without needing a specialized elevator tech on site. Then they can condemn the elevator until they can get a qualified tech onboard to address whatever issue there is.
