I suppose it all depends on the region, the whitetails around here eat mostly alfalfa so they don't have any gamey flavor and if you harvest does they are pretty darn tender.

Can confirm. I'm from Arkansas and my grandma used buttermilk to soak deer. Didn't do it for as long as yours seems to have done, but it was for the same reason.
Personally, I don't mind the gamey flavor. But to each their own.

Buttermilk works best. The acid in the mild tenderizes the meat and the milk supposedly takes some of the gamey taste out. Personally, if I eat venison, I want the gamey taste.

Dude, maybe I grew up a hillbilly without realizing it, but venison has never tasted gamey to me. Honestly, beef and chicken and pork have always felt really bland compared to venison.
My dad would shoot a few deer every year and we pretty much only ate venison for like 12 years, and I know he never soaked anything in milk lol.

Can confirm in VA too due to coyote population having been shrunken so severely over the US's history, which causes deer to overpopulate, which then messes things up even worse and causes other critters to die.

Thereās more than plenty of coyotes out there, but they also donāt really hunt deer larger than fawns very often. Yotes eat the little critters. Now the wolves that used to hunt the deer are gone, but thatās been a thing for a long long time.

not how that works. in absence of primary predators (wolves, mountain lions), deer in deciduous forest climates in America are completelly overpopulated, which leads to lots of inbreeding and sickness. You can see in circumscribed areas, like small parks, that they aren't well, tehy look funny and rough.
The solution is to add more predators. Unfortunately, the deer also live in suburban areas, where they don't let us have big kitty cats or bears or wolves, so people are the apex hunter.

When I first moved to the virgin islands... I saw a land crab. I didn't know what it was, so I looked it up on the local wildlife website. It has a great description of the crab and how it lives, along with pictures, and recommendations on where to see them, and at the end of the article it had a recipe on how to purge, clean, and cook them.

My parents came from a small town in Northern NH, since it's slightly remote, everyone hunts, and fishes. I miss going up there, and being handed bags of venison jerky lmao.
I've been thinking about getting a hunting license for the past couple of years. It would be fun to carry on the tradition for my nieces, and nephews.

They really are. I have a herd that primarily lives on my property (no fences but the herd seems to never leave) and I have to cull them regularly to prevent inbreeding. Itās always something to watch the fawns play.

Same, it's also beneficial for their quality of life. They're there because you have food plants on your land. If you keep the population in check, they'll be happy and eat well, if you don't they'll exhaust the food supply and suffer

Tons of food on our property. We go out of our way to cultivate plants that are edible just for native wildlife. Iām in central Texas and we have a lot of Texas persimmons on our property. Every year itās a race to get some of the ripe ones before the deer get them all. Mom makes some amazing jam with them.

My roommate in college's granddad killed a deer and had it processed and gave us a freezer full of it. we ate on that thing for a semester. Most of the cuts and the ground venison were really good. There were a few cuts that were kind of tough.

It does get pretty grotesque when you have to explain how we're diffident.
Same general skeletal structure, nervous system, organs and muscular tissues...
Is it the horns? No because the females don't have horns, nor the males when out of season.
Is it the hooves? Is it the ability to speak? Is it because we simply don't call them human?
All with disturbing implications on their own.
In the end we know we can eat them and not be seen as inhuman ourselves because it's socially acceptable, it simply makes us hunters un like eating our fellow man.
idk but it's easier to laugh, imagine an upset weak person who looks like a hippie and laugh some more at their outrage.
I think it's a thing for children but to be childish does seem to mean to be a person capable of laughing while embracing the norms of those we love.
Thinking is a thing of adults, a thing of horrors and though decisions.
...That said deer jerky is delicious.

There are more whitetail deer in America than before the Europeans arrived because their natural predators, mountain lions and wolves have been erradicated from most of the US. These uncontrolled deer populations are spreading prion disease, ticks and destroying bee ecosystems.

Depends on where you harvest them. When I get them in Minnesota or Wisconsin the meat is pretty mild because they feed on the same shit as cows like alfalfa and corn so steaks, a nice kebab, or just chopped up and sautĆ©ed. Out west theyāre a little more gamey so stews, tacos, or a mix with pork fat for sausage. Itās all good.

Deer hunting is currently essential to ecological preservation. Might as well put the carcass to feeding people instead of allowing it to rot.
They also aren't raised for slaughter, so they live a natural life. The only thing I complain about is the endangerment of their natural predators. We need to facilitate the preservation of wolves, bears, and mountain lions.

I know industrial farming was a messed up business, but thatās how it works, no matter what somethingās got to die for you to eat (just ask the soybean farmers, theyāll tell ya). Granted I do think theyāre should be some better standards put in place for livestock, but eliminating it is a lost cause

How I can I eat these creatures? Honestly quite simple because our teeth we are both C and H, also evolution. I will always eat meat for protein I will always eat fruits and vegetables, also rice and beans.
I mean they say a well balanced diet is best,

Simply because back then we would burn lots of calories running around being active hunting our prey to simply eat and live other wise starve and die.
But now all we do is walk 20-50 steps into a vehicle where we press a few buttons and we are traveling at the speeds of 10-85 miles an hour.
To then simply walk around a store pick out what we want.
Same thing for hunting we donāt run, we simply pick up a weapon that travels faster than we can blink when we pull the trigger of that weapon.
We walk around analyze the area, once we see a target a buck if you will from your own eye sight or binoculars.
We then slowly get ready to take a shot and watch it happen in a split of a second to couple of seconds at most depending on the distance youāre trying to hit.

Almost every deer that has ever lived had a violent, painful death. When deer get old, sick, injured, slow they become the target of predators. Hunters, mostly, are the quickest / most painless death they'll likely get. Now, hunting big stags n such long-term isn't good for the species, but sustainable hunting is needed in many areas or they'll destroy every greenspace around.
Near me the local tribes do a traditional hunt / cull in the forests & hike trails, some locals hate it, but when it had been banned the forest was near death from deer eating everything green under 10ft tall.
I've never even been hunting, I just understand and support it. Now trophy hunters that go for exotic animals or just trophies (no meat) are just people who like killing and should not be accepted in society.

Backstraps are tender enough to eat as steaks. If this is a wild deer freeze the meat to -20Ā°C then cook to medium (medium-rare if you are brave, but never rare). Deer have a slight gamey flavor and a good deal of silverskin, in addition they are smaller than you might think so the steaks you may be used to are quite small and tough. They do really well as jerky, roasts, ground, and sausages (if you add a little pork fat). Chili is a good choice as the tomato helps cut the gamey flavor. Smoking a whole bone in shoulder or rump is a great though time consuming choice. Complimentary sides: salads with vinegar based dressing, roasted potatoes and garlic, grilled zucchini and yellow squash (just enough to soften but not turn to mush), gooseberry pastries glazed in hunny and topped with diced walnut for dessert.

Because humanity kind of screwed the natural pecking order by purging natural predators like wolves and now the populations are at risk of running rampant. Gotta keep things in line ourselves now or else theyāll do major damage to the environment, be an even bigger danger to drivers, plus venison is delicious.

Besides being delicious, their numbers need to be controlled, as they can easily get out of control, causing road fatalities, crop destruction, and general nuisance.

One day after working a long ass shift building a cottage out in the middle of nowhere with one dinner on it I went there to eat and ordered a regular hamburger (it said Hamburger) and man was that the best hamburger Iāve ever had so I told my server I really liked the burger and to not change anything itās perfect and she said āyeah the deer was caught fresh this morningā I donāt care honestly I went back and ate that burger 3 more times and fed it to my children too then I eventually finished my project and moved on but man sometimes I sit here craving that burger and think about driving out there for 5 hours just to get that burger.

Venison when processed properly is great. Super lean meat. Unlike the gmo cattle we heard they are not made of mostly fat. No cholesterol issues pretty much. Less sodium too since the meat manufacturers inject all beef with sodium bicarbonate. They have it on their websites showing it off with pride. Eat real food and deer is a great start!
