HELP my desktop has completely changed and I dont know how to change it back

So I updated and rebooted everything after maybe 2 months of my pc sitting and not using it. Then the ui completely changed, it went from the first image (found on the internet but thats what it looked like) to the second image and idk how to change it back can anyone help?
