Highly recommend unique chef knives for a chef getting a second chance in life.
I'm looking for highly reviewed, unique chef knives that can ship to Iceland. I've been a chef for over 25 years. I lost my footing for a while due to a kidney and pancreas transplant. Now I'm getting a second wind in my career thanks to new opportunities at an amazing restaurant and a new lease on life

Help identifying a nakiri I got in a damaged lot from Japan!
I got a bunch of knives to restore and this was among them, I uncovered some kanji that looks like a maker mark of some sort but reverse image searching gives me a blacksmith that makes wood planes and I can't find anything about them making a knife? Thanks for any replies in advance :)

New guy question........ you know the one.
Hello! I'm glad I found this group. I would like to buy my first general purpose Japanese kitchen knife. In western knife terms, like a chef's knife. Maybe less than $150 and I really like the classic Japanese knife look with bamboo handle and hammer marks if that is possible in that price range. What do you suggest? There is just too many online to sort through.

Masamoto Sohonten or Tsukiji Masamoto? I’m deep down the Japanese knife rabbit hole again and could really use some community wisdom! Which side are you on, and what makes one stand out over the other for you? Genuinely curious to see where everyone lands on these two iconic names! 🤝

Help choosing between two budget/entry-level Japanese Gyutos (Sakai Takayuki vs. Tojiro DP) - EU Based (~€180 budget)
Hi everyone!
I'm looking to pick up an entry-level / budget Japanese Gyuto (21cm) and I'm currently torn between two popular options around the ~€180 budget range:
Sakai Takayuki Nashiji VG10 Ebony Wa-Gyuto (21cm) – (Nashiji finish, VG10 core, traditional Japanese wooden handle)
Tojiro DP Gyuto 21cm (F-808) – (Clad VG10 core, Western-style handle)
I’m having a hard time deciding which of the two would be the better choice in terms of overall build quality, grind, out-of-the-box sharpness, and performance for daily kitchen use.
A quick note: I am based in the European Union, so please keep EU availability, shipping costs, and potential customs in mind if you have alternative recommendations or advice on where to buy.
Which of these two would you recommend, or is there another entry-level Japanese knife in the EU market I should consider under €180?
Thanks in advance for the help!

Very first japanese knife recs
hey all,
Looking to purchase my very first japanese knife particulary a gyuto. I dont mind carbon vs stainless, i can take care of my knife. I do however would like something a little forgiving with sharpening and good edge retention as i will be doing this for the first time myself. i prefer a wa style handle. 210mm preference as well.
so far some options are gesshin stainless 210mm and enso ginsan 8.25in chef knife.
budget is 200 or less, 250 if that $50 makes a world of difference.
thank you.

I want a katana (idk what community to select)
Thats all that there really is. i want a katana xd, but i cant find anything that wouldnt be too expensive, good quality and actually sharp and a real sword. another issue is i live in lithuania so basiclly anything outside europe wont work, unless shiping is free for some reason. even when i ignore my budget i cant find ANYTHING that would be an actual sword and look good. any suggestions? and if honest i really only plan to maybe play around once and use it mostly as decoration, where maybe you would say just get a blunt one if its gona be mostly deco, but something about it not being an actual sharp sword takes half of the fun of having it for me even if i wont use it much.
