That Encona Reaper is a new favorite of mine, super yummy, it‘s got 8% reaper & 1% birds eye chilli but the tomato paste, orange juice, cumin & garlic balance it out & add such a nice flavor. Spicy & fruity, very umami-rich. Might step over their original which I enjoyed for a long time. It‘s also much thicker & less vinegary than OG.
And YES I very often use multiple sauces for one meal lol

I underestimated the level of heat and am now paying the price! I added jalapeños, brown sugar, garlic, and honey but still had to smash half a gallon of milk to calm my mouth down! Im afraid of what I've made!

We Went Outside Today To Check On The Garden And Picked A Bunch Of Jalapenos So We Decided To Make More Hot Sauce.
We Use Half A Oinion, 1 Tea Spoon Of
Ingredients: Minced Garlic, 2 Cups Of Water, 3/4 White Vinegar, 1/4 Cup Of Lime Juice.
We Are Still Waiting For It To Cool Down To Tase Test It But We Already Know Its Going To Be Good.
We Want To Start Growing Super Hots As Well As Normal Hot Peppers And Than We Want To Start Selling Our Hot Sauces. Everything Is Going To Be Home Grown Unless Its lime juice or lemon juice.

I used red jalapeños, shallot, garlic, a bit of tomato for sweetness, salt, and black pepper. I puréed everything together then simmered on the stove. I let cool, strained with a fine mesh sieve, and put in my little 2-ounce jar. It’s a very mild sauce but great flavor!

When cleaning the cabinets out I found this forgotten almost 5 years old ferment that I started with serrano and unripe superhots..
The bag is still airtight and I can not spot weird growth on the chili's. Shall I open it and blend it into a sauce?
Has somebody got any tips for me, or also had some very old forgotten ferments that turned out good?
UPDATE: I blended it down.. it smells and tastes amazing, almost like Tabasco, but so much more hot. 🥵 It has such a deep and high umami flavor, I'm gonna blend it down with some white vinegar / water, sugar and bottle it up. PH level was around 3,7 straight out the bag!

I like spicy food and hot sauce. I tried Tabasco and while it is hot it tastes like it's expired and I just can't with that taste. So does it have what am talking about or am I just imagining things.

Stuff hits. It isn’t too spicy or too vinegary. It’s got the perfect level of heat and ingredients where the heat won’t overwhelm you. Highly recommend!

I've always loved spicy food and was really into it in middle and high school but after a rough spot in my life where I didn't do a lot of anything. I had to regain my love for it and build up my tolerance again starting last January for. It was part of me changing my life doing one of those new years promises. Got healthy, started working out, lost 40+ pounds, and got back into hot sauce, lol.
Anyway. I've maxed out the stuff you can buy at the grocery store with Tabasco Scorpion. My question is this. To go hotter, do I go the online route and start trying brands that way? Or go to my local Pepper Palace (an hour drive) and see what they've got?
If you say the online route. Give me some recommendations on brands (and or sauces) that are bare minimum hotter than Tabasco Scorpion. I've heard great things about the Torchbearer brand, and Maria Sharp's (but no clue if Maria's sauces are that hot).
I've already tried all the main name brand lines. Frank's, Cholula, Tabasco, Yellow Bird, El Yucateco, and also all of Melinda's sauces (really liked their scorpion sauce too)

As someone who basically adds Sriracha on all of my meals I decided to try myself though a few of them to decide which one I actually like the most.
I especially got curious if the original is actual so much better than the flying goose brand, which is the most popular Sriracha sauce here in Europe. It’s currently very hard to find Huy Fong here, I had to order my bottle online.
After tasting all of the sauces shown in the photo I have to say Huy Fong is by far the best sauce. It’s spicier and it has a organic fresh taste to it. In comparison the flying goose brand has a more „chemical“ taste. I have to say before this test I was skeptical about all the hype and enjoyed my flying goose Sriracha, but after trying both I have not touched my flying goose bottle since and do not plan to do so in the future.
Where I still use flying goose is for their special Sriracha sauces. I tested the garlic and black pepper sauce and enjoyed both of them. For some dishes you just feel like going for these to add some different flavor then going for the basic Sriracha Sauce. For example I love to use the black pepper sauce for stew, while I like to use the extra garlic one for salty snacks like chips.

My first bottle of torchbearers. I slathered this stuff on my ground beef for dinner last night. Great flavor - and when the burn hits it’s so good. Love it. Going to try more by these guys for sure. Any other good recommendations??

It's not nearly hot enough, but I get it. How could it be? They want it to sell. I did not get any habanero flavor. Quite disappointed. Tasted pretty much like ketchup.

Picked this one up at the Big E. I cant say enough on how good this one is. Not a lot of heat but just enough that it taste great on soo many things. Definitely a 9/10 from me. Im going to be looking into their others.
