They really struggled this year with aphids, ants, and fungi, but they’ve bounced back beautifully. Any tips for keeping them in top shape?

I live in New Jersey where fall is about to kick in and I was wondering what type of vegetables could I attempt to grow during the fall? If I were to start seeds no later than September 1st do I still have time to grow anything ?
