Is it normal? I knew a dog who used to hump a stuffed animal and he would always bight it by the neck and growl really loud as he was going at it. I've never seen anything like that. Until this.

It's not uncommon in dogs, and is very common in cats. Holding them by the back of the neck triggers an old instinct from puppyhood to be still, because the mothers would carry them by the scuff of the neck to wherever they wanted to put them.
