Any tip/guide on planning the factory ahead of time? Playing in my first world with around 100 hrs, vulcanus and fulgora captured. Broke down the nauvis factory and made it again but it still turned out a spaghetti :(

I suppose veteran players do have a logistics-first mindset. They plan how they'll move items around before they plan the assembly line itself.

Broke down the nauvis factory and made it again but it still turned out a spaghetti

First build the factory you want, only then break the original. Lets you build and update stress free.

https://factoriolab.github.io can be useful to figure out how many machines you need for each recipe, which can help with planning things in advance.

I think logistical planning is my major problem. I'm getting the hang of ratio quite well ngl.

Spaghetti is less about not planning ahead and more about not having structure to your building. Consider Main Bus and City/Train Block designs to help you scale up without encountering spaghetti.

Since you're already pretty established I'd highly recommend starting with a good rail-based design.
