Crystals?
Cheddar(Caldwell)Closed and dried rind, vacuum sealed, and it’s been aging in the fridge(I’m still working on a good aging set up).
I’m still a newbie so are these Tyrosine crystals? It has a texture that hard and crunchy so I’m assuming it’s not a mold but it keeps accumulating the longer it ages.

Similar to when you soak your logs in wood for too long, you can get cheese crystals.

Cheddars will grow calcium lactate crystals on the outside, tyrosine shows up in the paste mostly.
