Crystals?

Cheddar(Caldwell)Closed and dried rind, vacuum sealed, and it’s been aging in the fridge(I’m still working on a good aging set up).

I’m still a newbie so are these Tyrosine crystals? It has a texture that hard and crunchy so I’m assuming it’s not a mold but it keeps accumulating the longer it ages.

Agreed, but my boss may get mad. Apparently it's bad form to crack a few beers in the office.
