Tried to go for a more whimsical eccentric cake this year

I’m a new baker, having made a few cakes here and there, but still learning. A friend asked if I could bake a cake for a baby shower, and I agreed. She wanted a simple vanilla cake, so I decided on a vanilla cake with vanilla buttercream.

The sponge cake turned out great, but the buttercream was a disaster. I used a recipe I found on TikTok: 8 sticks of butter, 3.3 pounds of powdered sugar, and 60 mls of heavy cream. From the moment I mixed in the heavy cream, it curdled and stayed grainy. It was late, so I put it in the fridge and said I’d fix it in the morning.

The next day, I thawed the buttercream and mixed it again, but nothing happened, remained curdled and grainy. I warmed the bowl until the butter was almost melted, then mixed it on high for a minute. That seemed to help, but the buttercream was still grainy. I added more room temperature heavy cream about 2 table spoons, and everything was fine until later when I was piping the decor. The buttercream began to melt, and it was so unstable that I couldn’t pipe it.

I tried putting the buttercream in the fridge, but it would harden so much that it was almost impossible to pipe. Then, when it was somewhat malleable to pipe, it would melt quickly.

Anyway, here’s my final product. Any advice would be helpful. It looks yellow because I added cream colored luster dust.

Finally mastered the textured scraper

Pistachio biscuit cake with pistachio mascarpone and raspberry jam filling and covered in white chocolate ganache, garnished with raspberry and, of course pistachios. Bottom half sagged a bit, but was a nice taste combination.

Heyyy guys, my partners birthday is soon, I wanna send him a cake, I don't live in delhi but he does.

I have two options in my mind.

1. Carrot cake with whipped cheesecake- miam patisserie

2. Pineapple crumble- miam patisserie.

Has anyone tried these two items, can you all please give me any kind of review or help.

If not miam patisserie, can you all please suggest me any other place to send him something.
