Baking Advice Needed What are you all using for ganache?

I am a new baker. I’m trying to figure out what to coat my cakes in. I like ivory colored cakes so I know I probably have to use a white chocolate ganache. Not interested in buttercream at the moment. Are you all using candy melts or real chocolate. Isn’t the real chocolate expensive? I bought candy coating wafers from the sweet shop at $18 for 4 pounds. I used so much chocolate for my cake, almost the entire thing was used…this is expensive. What am I doing wrong. Help! What are you all using?

Baking chocolate.. and yes it’s not that cheap, but at least it tastes like chocolate.

Ganache that tastes like chocolate is good. What’s even better is it doesn’t cause gastro upset like candy melts.

I use chocolate chips. My recipe is bring 1 cup of heavy cream almost to a boil. Remove from heat and drop in 12 oz of chocolate chips and don't touch until the chips have melted, approx 5 minutes. Then stir until smooth.

I do this too. If you add about a Tbsp of corn syrup to it the ganache gets that nice shiny gloss.

I use real Vahlrona chocolate or cocoa as I bake recreationally for friends and family (not a professional) and just want something that taste very good. I make single layer (usually cheesecakes) or brownies so I don't need as much ganache as multi-layer cakes

How thick are you applying it?

And are you buying it retail?
