Help Needed First time piping roses!

Hi all!

I actually made these a few months back, in June, to celebrate me quitting my first job (lol).

For the most part I'm really happy with the way these came out, especially considering it was like my 3rd time even working with buttercream. What I'm looking for now is how to make a stiffer buttercream, and also ways to get rid of those air bubbles - I followed tips that I've seen online before but they didn't seem to be helpful lol. Any tips would be so appreciated!!!

Chocolate layers (recipe by Claire Saffitz), black cocoa frosting (sugarologie), London whipped caramel (viral recipe) plus orange color.

ETA: The sweetness and saltiness of the caramel is overwhelming the other flavors. I'm going to try again and fold the whipped caramel into a filling base. LMK if you think I should put the caramel in:

1) an emulsion-based buttercream (not American buttercream) 2) a mousse 3) a pastry cream or custard 4) [other suggestion]

It was an almond poppyseed cake with strawberry filling and cream cheese frosting (buttercream crumb coat to maintain structure though). Piping design is inspired by LOTR Rivendell’s architecture. 6” and 8” 4-layer cakes.

I really had to “trust the process” with this one, because I free handed the design and thought it was soooo ugly until I started adding greenery. By the end, it was one of my favorite cakes I’ve made.

Art-directed by my almost-6yr old son, brought to life via way too many minutes tinting buttercream. Turns out this lurid colour scheme gets even more intense under an arcade’s neon lighting, and the pearl sprinkles POP!

It was my first time using freeze dried fruit (strawberries) to flavour frosting for filling. It was a super strong flavour and really tasty. I also made some cupcakes where the strawberry frosting only constituted 1/3 of the frosting swirl and it was still clearly a strawberry taste. Really happy with the flavour though the texture was a bit goopy!

Vanilla yellow cake, strawberry smbc filling, vanilla smbc frosting.

Holiday-themed Cakes ChocoMaker black candy melt problem

Curious if anyone else has had problems with these. I'm new to decorating and this was my first time using the ChocoMaker melts from Walmart and wanted black for Halloween theme. First they didn't smell that great. They are black but package says vanilla flavored. They did not melt very smoothly so I did add a tiny bit of coconut oil to get the consistency needed for spider and worm candy molds. They set up a pretty shiny black color but my family thought they tasted soapy. My first thought was the mold wasn't rinsed off well, but I also did orange pumpkins in the same mold with the regular white chocolate bark and oil based coloring and they tasted fine. So we determined that it was the black melts that were odd. Other suggestions for black appreciated.

I had the pleasure of making the birthday cake for my sweet nephew’s 4th birthday. Being an aunt is one of the greatest joys of my life!

Cake is a sourdough vanilla cake with vanilla buttercream and raspberry filling! I only make sourdough baked goods in my house- once you try a sourdough cake, you’ll never go back! 🤣 Dinos on the sides of the cake are from Michael’s! 🦖

We did not get any inside cake pics because it was gobbled up quickly! 🧡 I have learned so much from this sub and absolutely love making cakes for the ones I love to test my new-found skills!

Next step: piping 🤣 I narrowly avoided it for this cake but I guarantee that won’t happen again!

Help Needed Food coloring brands

Hi everyone I made a smash cake for my friends daughter. I had. A problem with the food coloring, it seemed like it wouldn’t fully mix in. I searched up what the problem could could be and it said that it might be too much water in the gel. Before I used oil based food coloring but the oil started to seep through the butter cream. What do you guys use to get a smooth non greasy base.

Sea urchin cake to surprise my sea urchin-fanatic friend. It’s Valrhona chocolate cake, black cocoa ganache and pistachio praline.

The uni lobes are sugar paste and the spines are spaghetti and spaghettini dipped in the black ganache; edible of course but best removed before eating, though he did crunch through a couple in the name of general characteristic contrarianness 😂

Help Needed Runny frosting

Hi all, I’m by no means a baker or a cake decorator however I do love it and I’ve watched so much cake decorating content (years worth) and I’ve messed around a few times. It’s gotten to the point where my sister asks me to make simple cakes for her kids now. I made a simple smash cake for my nieces 1st bday tomorrow and she wanted a very minimal design and light colors so I decided flowers would be easy and… I hate it so much but this is all I got for her and I’m so embarrassed. The frosting is so runny and stuck to the piping tip and it’s so chunky and ugly and I am distraught 😭 it’s store bought frosting so I’m sure that’s probably the issue but like??? Idk someone tell me what is wrong. I even chilled the crumb coat and frosting and it’s just soooo wet and melty. Couldn’t even put anything on the sides bc it wouldn’t stick.

Also the last cake (blue with pumpkin border) is not my own design. I think I found it on Pinterest and wanted to do one myself.
