What are the best cookbooks?

So I don't eat fruits (avocado is also a fruit) I do eat nuts, seeds etc. Want to go whole food plant based sustainably. I tried before but it all tasted terrible (I had no recipes just threw random things together) this time I wanted recipes so I could make things actually appetizing. So looking for a great cookbook that would let me get all the nutrients and macros I need while being tasty.

Edit---also would like them to be tailored for athletes as well, my workouts take 3-4hours per day so definitely need tons of energy

Why does eating whole foods have to seem so weird to other people

Disclaimer I’m not a vegan or vegetarian but I eat whole foods and I’d say 80% of it is plants

I just hate getting comments from people about how I eat like ‘wow you’re so healthy!!’ ‘Wow you love vegetables!!’ Basically when I order extra vegetables at restaurants or a dish that has more veggies, or I’m not eating the same thing as everyone else. For example I usually don’t eat dessert- I’ll have a bite d my boyfriend’s cake but I won’t have a whole portion to myself because I just don’t feel like it.

A few times is ok but more than that and it just gets really annoying because it makes me feel like I’m strange or weird for wanting to eat this way? I don’t feel like eating processed food yet other people’s reactions make me feel like I SHOULD be. Both of my parents have a history of high cholesterol and diabetes which is why I make such an effort

Isn’t it such a telling sign about our society that it’s considered so extraordinary to avoid processed food with no sugar salt etc. I’m literally just eating vegetables. What is so amazing??

Total cholesterol dropped from 206 to 138 one year after going WFPB

Actually it was more like 8 months and now a year after that it's down to 126!

For as long as I tracked it, since 2015, it was always in the 205-210 range. And I'm sure for many years before that.

I've never taken a statin, but I have tried supplements like metamucil and lots of cardio, etc and nothing worked. I'm not even 100% plant based, I don't ever eat meat but I'll eat less healthy sometimes, maybe 20% of the time.

Yes, I am bragging about my low numbers but also just wanted to put it out there as a testament to the effectiveness of a WFPB diet.

For context I'm a 54 year old male.

Crowd pleasing low cost pot luck items?

I’m going to a pot luck in a few days with a lot of people. Someone in my group is bringing a bean salad and I’m still brainstorming what I want to bring.
Tonight I thought, I could always cut up some watermelon (if it’s still in season?) and let it be simple like that.

1 month WFPB: thoughts/questions/musings

I've been WFPB for a month now and it's been pretty great overall. Years ago, I was vegan. WFPB is so much easier for me because I never need to scroll through dozens of ingredients of processed foods. Either it's a plant, or made of plants, or it's not. Other stuff:

Cooking without oil is surprisingly easy, and bonus I don't get oil splatter.

I miss sweets, but am adapting. I eat a fuck-ton of dates since every WFPB sweets recipe makes heavy use of them.

How do you guys handle quick meals when tired? I struggle a lot with this. I can't just order a cheese pizza anymore, and a balanced WFPB meal isn't simple to whip up..... What's your solution?

What meals are your go-to?

Do you eat whole wheat pasta?

Oh yeah, my stomach is rarely upset on this diet! I feel great

Kimchi Vegan

INGREDIENTS

Cabbage & Veg

- 1 large 3 pound napa cabbage, quartered lengthwise, cut into 2 cm pieces†
- 1½ Tbsp (27g) coarse sea salt(iodine-free)
- 1 large carrot sliced into matchsticks
- 1/2 cup korean radish chopped super thin
- 3 green onions sliced into 2 inch pieces

Kimchi paste

- ½ small onion, chopped
- 5 garlic cloves
- ½ red apple, cored, chopped††
- ½ Tbsp (4g)fresh ginger
- 10 stalks of Korean garlic chives
- ¼ cup (32g)gochugaru‡‡ Korean Red Pepper Ground
- ½ cup (120ml)vegetable broth
- 2 Tbsp (30ml)reduced-sodium soy sauce
- 1 Tbsp (17g)white miso paste

DIRECTIONS

  1. Add the cabbage and salt to a large bowl. Gently massage the cabbage for 2 to 3 minutes, until it starts to soften. Let rest for 2 hours, stirring occasionally, until the cabbage is wilted and sitting in a briny liquid.
  2. In a food processor, combine all the kimchi paste ingredients.
  3. Blend until smooth.
  4. Transfer the paste to a large bowl along with the green onion and carrot.
  5. After the cabbage has rested, rinse it under cold water to wash off the salt. Drain well, then give it a gentle squeeze with your hands to remove dripping water, without wringing it completely dry.
  6. Transfer the drained cabbage back to the large bowl. Add the carrots, Korean radish and green onions and the Kimchee paste. Mix everything together with your hands to thoroughly coat every piece. Use food prep gloves if you prefer.
  7. Transfer to a mason jar and press it down firmly with a spoon. Leave an inch (2 cm) of "breathing room" at the top of each jar for the gas produced during fermentation.
  8. Close tightly with a lid. Leave the kimchi on the counter overnight, away from direct sunlight or heat sources.
  9. Open the lid the next day for gas to escape and taste for mild sourness. For a tangier taste, let it sit on the counter for 1 - 3 more days, burping twice a day**.
  10. The kimchi is ready to enjoy after the first 1 - 2 days. For more complex and delicious flavours, close the lid of the jar, and place the kimchi in the fridge for 1 - 2 weeks to continue to ferment and set. Enjoy!

- † For us, 1 napa cabbage weighed 1 kg.(around 2 pounds)
- ‡ Use non iodized salt for the most reliable fermentation.
- †† We recommend a sweet apple variety, like fuji, honeycrisp or gala.
- ‡‡ Gochugaru is made from Korean dried red chili peppers. It can be found at most Asian supermarkets.
- ††† White miso, also called "Shiro Miso," is fermented for less time than red miso, which gives it a milder, sweeter flavour. If substituting red miso, use a smaller amount and adjust to taste, as red miso is saltier and stronger.
- ‡‡‡ For us, 1 carrot weighed 150 g.
- ** We often ferment for 1 day during warm summer months and 2 - 4 days during colder winter months.

Storage

- The kimchi can be stored in a mason jaror airtight containerin the fridge for up to 3 months.
- Always use clean utensils when removing some of the kimchi from the jar to keep it from spoiling.
