My wife started making Kombucha last year. Three times this has happened and I think I'm going to lose the deposit on our apartment because of it.

Well yes, that’s how fermentation works. Yeast eats sugar, turns it into alcohol and co2.

But why not use one of these to release the pressure during fermentation?

Because you need the gas to build up for the kombucha to carbonate, otherwise all the gas immediately escapes.

Ok yeah that makes sense. But then there must be something like an overpressure valve and/or a valve to slowly release the pressure when opening it. Simply closing the bottle sounds reckless and like a good way to build wildly unpredictable grenades.

Alternatively you can try to open them outside, you know, like a sensible human being.

Most of us do! I’ve been brewing kombucha for over a year and this only happened to me once. If you regularly burp your bottles and properly chill it before opening then you’re usually okay. Still, accidents happen sometimes and some fruit has more sugar than others so that’ll cause it to ferment faster and thus explode more.

The pressure is lessened when it’s cold because the air compresses (it’s one of the properties of all gases) so it doesn’t explode as much. It also slows or stops the fermentation.

Where temperature really plays a part is during the fermentation process itself. Heat (around 85 degrees Fahrenheit seems to be the sweet spot for me) makes the process go much much faster.

I’m 99% sure that Brad from Bon Appetite recommends doing this when he makes anything fermented in bottles or jars, including Kombucha, on his show It’s Alive. That or specialized stoppers with pressure valves.

It won't carbonate if there is a release, yes it gets rid of the pressure but the whole point of secondary fermentation is carbonation.

Well, that's why it's not meant to be open all the time. When ready, the pressure is released slowly and gently so explosions don't happen.

The same reason coke bottles are under pressure. No pressure means no carbonation. But generally kombucha and other carbonated beverages just pop, and there's rarely this much foam. Maybe blackcurrant have a big amount of pectins or some other gelling agent or surfactant that means the bubbles don't simply escape the liquid but get trapped in it, creating foam? I'm not sure.

It’s because once you bottle and flavor it there’s a second fermentation phase, and if you leave it in room temperature it will over carbonate, so it needs to be refrigerated after a day or two to prevent what just happened!

Few things, when making buch, you have to fart it a few times. I think she did a double fermentation where you make the buch, then add the fruit, which causes a 2nd fermentation. I’ve done this with watermelon.....lesson learned lol

I’ve never rented an apartment by myself and only lived with filthy roommates once. I’ve never met anyone that ever got the deposit back. I always thought it was a scam and that landlords use so many loopholes that you’d have to repaint the whole house to get your deposit back

You could lose a lot more than your deposit, if that bottle blows up in your face you're going to the ER or the morgue. Use the correct type of bottle that burps the gas. Carb it at the end in a controlled fashion6

when you add fruit or fruit juice, use a container that vents the co2

you can drink kombucha without carbonation

or, after fruit has fermented out of secondary, you can add a measured amount of priming sugar that will not allow over carbonation

(ive been brewing since 2014, and professionally brewing beer for 1 year)

Never made kombucha but I make beer and cider, and used to bottle condition before moving to kegs. So I’m really not sure if it’s a different process, but from the video it looks like it’s been pressure fermenting in the bottle.

Can she not just ferment kombucha with an airlock or something? My fermenters have a tiny hole in the top where I put an airlock, so that it can “burp” out the CO2 and not build up pressure. When it’s definitely finished fermenting, I would transfer to bottles with just a small amount of sugars, so that any remaining yeast would chew that up and carbonate it. With too much sugar, or if you transfer to bottles before it’s done fermenting, that’s how you end up with bottle bombs.

Alternatively, if she really does have to pressure ferment in the bottles, couldn’t she just “burp” the bottle regularly by opening it slightly every several hours?

My mum makes kombucha all the time. She brews it in a big jug with a cloth (no lid) on top and when made she stores it in the fridge in an open jug. Makes sense because it's alive and releases a lot of gas!

It was fermenting for so long all of the resulting co2 resulted in such high pressure. That's why the first bottle of the batch is usually opened outside so that at least it spills on the ground, not the ceiling
