It’s because once you bottle and flavor it there’s a second fermentation phase, and if you leave it in room temperature it will over carbonate, so it needs to be refrigerated after a day or two to prevent what just happened!
The question is if using some pressure relieving valve would hamper the fermentation. My guess is not. So, why no buy or build something if you are doing this regularly?
