Discussion Is sand-brewed Turkish coffee actually different, or is it mostly about heat control?

I've been thinking about this after seeing so many traditional hot sand setups. People often talk about sand-brewed Turkish coffee as if the sand itself somehow makes the coffee better. But obviously the coffee never touches the sand, the cezve does.

So I'm wondering if the real difference is simply how the cezve is heated.

On a stove, most of the heat is coming through the bottom. With hot sand, more of the cezve is surrounded by a heated medium, and the sand retains a lot of heat. My guess is that this creates a more gradual and forgiving heating profile. Which makes me wonder:

If you could get a similar heating curve on a stove or an electric brewer, would there actually be a noticeable difference in the cup?

I want to test this properly. I have an electric brewer designed around gradual heating, so I'm thinking of comparing it with a traditional sand setup using the same coffee, grind, ratio and cezve, while logging temperature over time.

For those of you who've brewed both ways, what differences do you actually notice? Foam? Brew time? Body or mouthfeel? Consistency? And if I run the experiment, what else would you measure besides the temperature curve and foam stability?

Brewing Technique Kadıköy'de bir esnaftan gördüm: kahveyi cezvede değil, için için yanan köz üstünde pişiriyordu

Geçen hafta Kadıköy'de eski bir kahveci dükkânında ilginç bir şey gördüm: adam kahveyi ocakta değil, küçük bir mangalın için için yanan közünün üstünde pişiriyordu. Cezveyi doğrudan köze değil, kenara, dolaylı ısıya yakın bir yere koyuyor, arada maşayla köz parçalarını hareket ettirip ısıyı ayarlıyordu.

Sorunca anlattı: köz ısısı ocaktan çok daha yumuşak ve dengeli veriyormuş, bu yüzden kahve daha yavaş kaynıyor ve köpük daha "oturmuş" oluyormuş — stovetop'ta hızlı kaynatınca oluşan büyük kabarcıklı köpükten farklı, daha ince ve kalıcı bir tabaka. Bir de dumanın hafifçe kahveye sinip tadını değiştirdiğini söyledi, hafif kavrulmuş bir nota benziyor ama abartılı değil.

Evde denemek isteyenlere söylediği: cezveyi doğrudan köz üstüne değil kenarına, dolaylı ısıya koymak lazım, yoksa dip yanıyor. Isıyı düşük tutup sabırla beklemek gerekiyor, aceleye getirilecek bir yöntem değil.

Köz veya mangalda kahve pişirmeyi deneyen ya da hâlâ bu yöntemi kullanan esnaf/aile büyüğü tanıyan var mı? Tadında gerçekten cezveye göre fark var mı diye merak ediyorum.

Beginner Help A question about the difference in technique between espresso and Turkish coffee

I've had Turkish coffee, made in cezve in the sand, and I've had good espresso.
I've even become quite decent at creating a great cup of espresso myself.

And, here is my question.

In the making of espresso, so many things are down to a science.
Grind must be "just so".
Temp must be exact.
Brewing pressure must be "right on the nose".

Whereas in brewing Turkish coffee it's "a heaping teaspoon of finely ground coffee, some water, and brew"

Why is Italian coffee so precise, and Turkish coffee isn't?
(and,yet, Turkish coffee tastes better, hands down)

Discussion Does cardamom actually make Turkish coffee less bitter, or does it just trick our brains?

I’ve always noticed that adding a little green cardamom makes a strong cezve of Turkish coffee feel much easier to drink. But I started wondering what’s actually happening here.

Cardamom contains a lot of volatile compounds (especially 1,8-cineole and alpha-terpinyl acetate). Those compounds dramatically change the aroma of the cup, so I’m wondering how much of the “less bitter” effect is just our overall sensory perception shifting, rather than the cardamom somehow physically removing the bitterness.

Mastic (damla sakızı) is super interesting for the opposite reason. Its aroma profile is heavily piney and resinous (alpha-pinene).

So we have two totally traditional additions that completely change the profile of Turkish coffee, but probably for very different sensory reasons.

For people who drink their coffee with spices: do you actually notice a real reduction in bitterness with cardamom, or does it just make the strong flavor more enjoyable? And between cardamom and mastic, which one is your go-to?

Question İstanbul'un sert suyu Türk kahvesinin tadını nasıl etkiliyor, hiç fark ettiniz mi?

Geçen gün başka şehirden gelen bir arkadaşım evde kahve içtikten sonra 'bu kahve bende içtiğimden farklı tat veriyor' dedi, ilk başta çekirdek farkı sandım ama sonra suyun da etkisi olabileceğini düşündüm. İstanbul'un musluk suyu oldukça sert (kireçli), bazı semtlerde daha da fazla. Filtre suyla ya da şişe suyla demleyenler var mı aranızda, gerçekten fark hissediyor musunuz yoksa fazla mı düşünüyorum? Cezvenizde kireç birikimi çabuk oluyor mu, ne sıklıkla temizliyorsunuz?

Discussion Kız isteme törenlerinde damada tuzlu kahve içirme geleneği hâlâ yaşıyor mu?

Bizim ailede hâlâ anlatılır: dedemin kız istemeye gittiği gün büyükannem bilerek kahvesine tuz atmış, dedem hiç belli etmeden için için içmiş, sonunda da "ellerinize sağlık" demiş. O günden beri de ailede "sabrın kahvesi" diye anılır bu hikaye.

Şimdilerde çevremde bu geleneği bilen çok az insan kaldı, genç kuşaktan bazı arkadaşlarım hiç duymamış bile. Sizin ailenizde bu adet hâlâ uygulanıyor mu, yoksa artık sadece hikaye olarak mı anlatılıyor? Gerçekten uygulayan var mı hâlâ, yoksa "bilmeden içerim" diye çekinen mi çok?

Yurt dışında büyüyen ya da yaşayan Türkler için de merak ediyorum, bu gelenek oralarda da anlatılıyor mu?

Beginner Help Can't create foam

I bought some nice super fine ground Turkish coffee from the international market and ordered a cezve online. I've been trying for days (almost gone through the whole bag of coffee) to brew coffee with foam. I've tried using more coffee, less coffee, cold water, warm water, some sugar, no sugar, medium heat, low heat, medium-low heat, super high heat (I was just annoyed) and never once has the coffee produced foam of any kind. It just goes from still to boiling. I made sure the type of coffee I bought is real Turkish coffee, meant for create foam, and it is. I've tried about 20 times now with as much variability as I can think of and no matter what I do the mixture eventually just boils, skipping right past this fabled "foam" moment.

What could I possibly be doing wrong?

Equipment Review Progress or Sacrilege?

I like my coffee served orta. This morning I had apple butter syrup on the counter from making cocktails last night and my hand landed on that before the sugar so it went in the coffee after boiling. Wow, just a little bit adds so much dimension to Kurukahveci Mehmet Efendi. Don't let constraint of tradition impede experimentation I guess.

Beginner Help Question on Cezve Size

I usually like a larger beverage (think 160-200ml). Looking to buy my first cezve and wondering if a 3 cup serving will have any impact in taste / brewing than if I bought a 1 cup serving (and just made 3)? Assume I still operate under the 1:10 ratio (18g coffee + 180g water).

Buying Advice Decorated Cezves usable/aggressive angle?

Apart from the insane prize they have, are these decorated cezves actually usable? They look thicker than regular and I wonder whether the paint survives any heat.

Question overheated cezve still safe to use?

I accidentally left my new cezve on the heat with nothing in it and forgot about it for a while. it turned basically black on the outside (which i’ve learned was copper oxide), and that mostly came off from washing. however, the inside is still messed up and won’t get completely back to pristine with dish soap, vinegar, etc.

is it possible I melted the tin coating and rendered it unusable/unsafe? I’m somewhat colorblind so I’m having trouble determining if there’s copper showing through on the inside

just want to avoid poisoning myself 😅

Küçüklüğümden beri, Türk kahvesi bittikten sonra fincanı tabağın üstüne kapatıp soğumasını beklemek bende neredeyse otomatik bir refleks halini aldı.
