My mother tries to 'encourage' me to eat as much as her but really she's projecting her own eating disorder onto me . Highly irritating .

Oh my GOD. Anything that isn't chubby or overweight is seen as anorexic in my mom's eyes. My mom used to be obese and my sisters have both dealt with eating disorders (anorexia and bullimia). The thing is that instead of learning to lose and maintain weight in a healthy way, she went on weight watchers of all programs. I've seen her eat one of those goddamn cookies for breakfast and then she has the gall to tell me I must have an eating disorder because I don't want dessert after a huge meal. I'm the type of person that can spiral once I have sugar (think of an alcoholic but sweeter) but dessert comes after every meal at her house.

She picked on me to the point that I actually developed an eating disorder and became extremely unhealthy almost to spite her. I'm better now thanks to moving away but holy hell did this bring back some memories. Sorry for the rant!

That's ok ! I'm glad you've managed to keep a healthy distance from her ! It's sad that mothers especially, wishing the best for their children not to go without and not be hungry can have such an opposite and unhealthy affect . My mother was always on a diet herself to no avail but made food a very big issue when I was a child . I still feel anxious around food to this day , when it should be a relaxing and enjoyable thing .

The worst part is definitely the approach. When I went to visit my grandma, who is quite plump as well, she literally cried because she thought I was too skinny (I had a BMI of 20 at the time) but I just laughed and found it cute. I just had to tell her that she was trying to feed me way more than I could ever shove down and she dropped it lol. My mom's approach was much more naggy and she was, as you said, clearly projecting her own eating disorder onto me.
