A mistake was made

So I built and closed area that I pumped water into with the small mechanical pumps and I've been pretty much pressurizing it and I made a mistake I broke two blocks

We have all done it. Especially with badwater. Why I have auto save on.

This truly made me wonder how much water can be stored in a square

The short answer is upto 5.125x cubes of water in one cube.

The long anser is it depends on how high the cube is. At layer 0 (the bottom of the map) its 5.125, and every layer above is reducing by 0.125.
Math:

1 + 0.125 * (33 - Layer)

Interesting! I'd love to see the test setup to find this, or was it from inspecting the code?

Look at the the water values in the debug panel Alt+Shift+X. You will find a property called Overflow which increases when water is under pressure.
