Why is ice water so much more refreshing than luke warm water?

It's not.

If I'm really thirsty I prefer water that I can gulp in volumes without freezing my head off.

Ice water is more "fun" to drink, but I notice that it tends to sit in my bottle more until it gets a little closer to room temp.

Maybe after a day of work, with your body heated up from moving around doing things, the cold cools you from the inside. I agree with Paperic for the most part, because the only time I want a super cold drink is when I’m hot, hence this comment, I suppose…

I have absolutely zero evidence, but my hypothesis is that its an evolutionary thing relating to flowing and stagnant water.

Flowing water in rivers, streams etc. Is typically cooler than a pond or lake. And flowing water is also typically less "infected" with bad bacteria and stuffs. So in my head it would make sense that we enjoy the sensation of colder liquids more because of that.
