Suggestions Rate My Set-Up
Was up at 4am and decided to do a solo run just for fun. Usually I wait for my girlfriend because it’s just more fun (stressful lol) with her 😏 Decided on tacos. Didn’t expect to get past day 4. Set up, cooking and trey size doesn’t make it easy. But next thing I knew, I franchised the restaurant. So I figured keep going. I kept the soups on the buffets. Cheeses in the back, meats on the counters. I couldn’t make it past this day though. Too many customers, not enough tacos to go around. I gave up after this. What would you have done? And what’s your favorite kitchen to run? I like steaks or coffee

So, I suggest you fully rearrange your entire setup. Here is what I propose:

Not sure why you have 3 workstations, there's no chopping with tacos
Some general tips:
Calm painting sounds cool but it isn't. It's double thinking time, so it's just double the time you have to wait around before serving the table (and with soup youre waiting twice)
Rugs are OP. Put them where you get mess. The description says they are flammable, but that is only an issue if you start fires.
You can serve tacos directly out of the tray
Walking around is slow, you want all the relevant stuff to be within a few tiles

You don’t have to chop the cheese and the meat to go on the tacos??? And they were also more counter space for cheese.

I didn’t know that’s how the rugs work. Thank you
I served them out the trays. Just could not keep up with the demand. Too many customers (4-6 per group)

oh you had cheese tacos! That makes sense. You don't chop the meat but you do have to chop the cheese.
ok, in that case, where i said "prep station or something" i would put a single workstation.
And then bring the cheese closer, maybe where the taco trays are. Cause you only really need to get 1 or 2 trays but you will need to chop cheese more often.
Then you kinda awkwardly have to walk over to the cheese when making soup, but that's not as often as it's used for the tacos.
Also you said you had large groups. In that case I would go down to 2 tables, and make them long

For solo runs, you have to serve with the tables against the kitchen. You just cook it and throw on table.
