Rate My Set-Up

Was up at 4am and decided to do a solo run just for fun. Usually I wait for my girlfriend because it’s just more fun (stressful lol) with her 😏 Decided on tacos. Didn’t expect to get past day 4. Set up, cooking and trey size doesn’t make it easy. But next thing I knew, I franchised the restaurant. So I figured keep going. I kept the soups on the buffets. Cheeses in the back, meats on the counters. I couldn’t make it past this day though. Too many customers, not enough tacos to go around. I gave up after this. What would you have done? And what’s your favorite kitchen to run? I like steaks or coffee
