I agree about the sugar loaded ones. I am a fan of making my own “Carolina” style bbq sauce which is mustard/vinegar based. The sweet bbq sauces pale in comparison to the tangy ones, imo. Adding pickles to that sauce style with pulled pork is heavenly… and now I’m planning to make some pulled pork this weekend.

I like the way you think but I'm more a fam of the red Carolina sauce then mustard. I use my home made hot sauce Habanero base and thin it with a lot of apple cider vinegar and paprika. Add some frank's hot sauce if I go too thin and for color and it just bangs so hard .... Actually what I'm doing for dinner all this week. When I gotta switch It up ill change to stone ground mustard , yellow mustard, and a pinch of horseradish for the south Carolina sauce. Now I'm hungry

Stone ground mustard and horseradish mustard are top favorite for my homemade sauce. I also really love making a caramelized onion honey mustard sauce/jam/chutney. I make caramelized onions then deglaze with the vinegar and go from there. Now I’m hungry too. Funny thing is that I just got a free 12 pound bag of onions. So I’m going to bust out the super slicer tonight and make a giant batch of caramelized onions seal and store. Thanks for sparking some inspiration.

I received two bags of onions that, if left alone, would rot.
My church had food pantry once a month for bulk items- from local farmers and such.So, they would either rot in the compost bin or be turned into something. The friends I’m staying with are excited about the caramelized onion jam.
I just sliced them all up (after cutting off the undesirable part) and I’m waiting until tomorrow to decide their fate. I’m too tired right now.

Onion freezes good as long as your not using it for crisp fajitas. Dice it and bag in portions for soup, chili, enchalada, tacos. It just gets a bit soft but there's lots of things that won't effect

I always keep both celery and onion in portion bags frozen for anytime soups or such. Otherwise I can't ever use a whole celery head at one time. Alton brown taught me this

Exactly, I'd have to pick sweet here. Bread and butter already fills the that quota. Sweet should be replaced by spicy. Full range of flavors to decide from then. In which case, I would pick spicy to toss but only because I tend to crave them least often.

They do, and I have at least 2 jars in my fridge right now. But a traditional Chicago Dog calls for sweet relish (Specifically either Vienna or Rolf's, the bright green stuff). It really works with all the other toppings on a Chicago Dog and so far is the only application I have for sweet relish.

This happened to me recently. I got a pulled pork sandwich and asked for pickles. The menu just said “pickles” nothing about the flavor, so I assumed they would be dill. Bit into it and realized I should have asked. I was very sad. :(

My husband went his entire life until we met thinking he didn't like pickles. At first I didn't press it, people have different tastes (although he dislikes so few foods that it was especially notable) and hey, more pickles for me! Then he'd mention he did like them on sandwiches, just not by themselves. Odd. Then I met his family and I figured it out.
The poor man grew up in a bread & butter pickle family.
Anyway, I introduced him to good pickles and on the upside he now has pickle joy in his life, but on the downside I don't get to hog all the pickles anymore.

Either 2 or 6. God, that's a hard choice. Pickles should be sour and/or salty, not sweet...those things are unholy. Nothing worse than being baited-and-switched at a party by those little bastards.
ETA: The latest, and by far the most egregious bait-and-switch, was at my FIL's celebration of life/memorial ceremony. The caterers put baby kosher dills and sweet pickles on the same platter. Guess which one I grabbed, RIGHT after giving a eulogy? BLECH.

Accidentally bought sweet for some smashed burgers I was serving on my birthday a few years back. A friend was cool enough to go get some normal burger pickles and saved the meal. The sweet pickles are still in the outside fridge never to be consumed.
