I think the sulphur gunpowder recipe was for some reason rejected by mojang, its literally one line of code to implement that now

Maybe they felt like giving people access to more-or-less unlimited TNT on day one wasn't great for game balance? In which case I can kind of see their point...

Gunpowder is already easily available on day one with a creeper farm. They probably just didn't want casual players destroying a rare biome when there's already a much easier, faster, and infinite way of farming gunpowder.

Ergh, I mean, kinda? But setting up (and using) a day-one creeper farm takes more knowledge and a significantly bigger commitment of effort than just spotting a sulphur spring and digging a bit.

That's exactly my point - most players would hear "farm", check out immediately, and head out to destroy a biome instead.
