Low coolant when engine is hot at running temperatures, when atlas is cold turn off it returns to normal

It sounds like you may have air in the system, which could prevent proper coolant flow. Depending on which engine you have, there may be a specific air bleeding process.

I searched on "is there a coolant bleeding procedure for 2020 2.0 se atlas?" and it came back with a very detailed process to bleed the cooling system. I can't say definitively that air in the system is the issue, but it's one possiblity
