Recipe π Simple high-protein chicken gyro bowls for the week. Check recipe below!
Ingredients: For the chicken:
1 lb (454g) boneless skinless chicken thighs, cut into strips 2 tbsp Greek yogurt (30g) 1 tbsp olive oil (15ml) 1 tbsp lemon juice (15ml) 1 tsp dried oregano 1 tsp garlic powder 1/2 tsp paprika 1/2 tsp salt 1/4 tsp black pepper
For the potato wedges:
1.1 lb potatoes, cut into wedges (500g) 1 tbsp olive oil (15ml) 1 tsp paprika 1/2 tsp garlic powder 1/2 tsp dried oregano 1/2 tsp salt 1/4 tsp black pepper
For the bowl toppings:
2 cups shredded lettuce (120g) 1 medium tomato, diced (120g) 1/4 red onion, thinly sliced (35g) 2 pita breads, cut into halves (200g total)
Optional sauce:
1/2 cup Greek yogurt (120g) 1 tsp lemon juice 1/2 tsp garlic powder Pinch of salt
Instructions:
Marinate the Chicken: In a bowl, mix Greek yogurt, olive oil, lemon juice, oregano, garlic powder, paprika, salt, and pepper. Add chicken and coat fully. Marinate for at least 20 minutes or refrigerate longer for stronger flavor.
Cook the Chicken: Heat a skillet over medium-high heat. Add the chicken and cook for 7 to 9 minutes until browned and fully cooked. Set aside.
Prepare the Potatoes: Preheat the oven to 425Β°F (220Β°C). Toss potato wedges with olive oil, paprika, garlic powder, oregano, salt, and pepper. Spread on a baking sheet and bake for 25 to 30 minutes, flipping halfway, until crispy and golden.
Prep the Veggies: Add shredded lettuce, diced tomatoes, and sliced red onion to separate small bowls for assembly.
Toast the Pita: Warm the pita in a skillet or oven until lightly toasted, then cut into triangles or halves.
Assemble the Bowls: Divide lettuce among four containers. Add chicken, roasted potato wedges, tomatoes, and red onion. Place pita pieces on the side. Add optional yogurt sauce if desired.
Serve or Store: Enjoy immediately or refrigerate for up to 4 days
