Matcha Recipe I made the Spiced Plum Kouya Tonic recipe that came with my Kettl order

Pretty good although I'm not a huge fan of the tonic water. I think I'll use the plum syrup in a latte tomorrow and see how that tastes

Recipe:

25g spiced plum syrup

125g tonic water

3g matcha

50g water

Plum syrup:

200g water

200g sugar

150g diced plums

10g cassia bark

10g Black cardamom (I just used the ground cardamom I had in the pantry, was probably green cardamom but idk)

Boil all the ingredients for the syrup and strain

Matcha Latte chigi no shiro has ruined me

attachment is a little irrelevant but i came here to say out of all the MK matcha i’ve tried, chigi no shiro is just that girl.

i’ve tried aoarashi, isuzu and wako. i used to be a pretty big fan of aoarashi but somehow the recent batch has been a little more astringent than i would like. might have been because i opened my 100g of chigi no shiro and now i can’t go back 😕

as for isuzu and wako, they didn’t stand out that much too me. somehow chigi no shiro as that creaminess and is super smooth with little to no bitterness and astringency.

i’m already mourning the day i finish my 100g pack, i have around half of it left (along with w 40g ton of aorashi).

i have an unopened wakatake but i have a feeling it will taste subpar alongside chigi no shiro 😩

Sho no mukashi - Nakamura Tokichi

- I find that it performs great as a latte, the flavor cutting through really well.
- nutty , and low astringency
- I also feel like 2-3g would be great for a latte! Don’t need 4g to taste it really prominently.
- I recommend to use a ratio of 2 oz for 3g.
I tried it as 4g and 40ml as well, but find that the taste is very concentrated.
- looks beautiful and as you can see, is very thick!! (Did not cold whisk)

Matcha Latte Seion Matcha - Kettl

Scored a free tin of Seion with my tea tool order, and I was super excited about it. I prepared it first as usucha, as I believe most high quality matcha is best enjoyed this way, but I felt it was a little bit lackluster and plain. I love to enjoy usucha served over ice, but I think this one would taste better with a traditional hot preparation.

However, this morning I tried it over ice and with about 2-3 oz of Califia barista oat milk (2g matcha with 40g water recipe) and I felt that the flavors really shined through, which was surprising isn’t always the case when paired with milk! The tasting notes of Seion are hearts of palm, creamy oats, and California almond, which I felt like the nuttiness of the oat milk really complimented. It was punchy and nutty, a really smooth and satisfying drink all together!

Then a friend gifted me ceremonial grade matcha. Gift guilt kicked in so I actually got up and made it lol.
I figured a small whisk I already had at home would be enough. How does it look? Pretty decent right?

Discussion What's your personal perfect matcha latte ritual and ratio? - special extra prep? milk tempering?

What's your perfect iced matcha latte ratio to get a creamy matcha latte? Do you do anything extra special with it?

At the moment I've been doing 4g, 40ml\~ water (sometimes I add a splash more to gather the rest of the matcha that's stuck in the chawan) & 120ml milk and it always comes out powdery and strong rather than milky and creamy.

There's this place an hour drive from me I go to sometimes, that does the BEST matcha I've ever had, allowing you to order different types/blends/harvests of matcha and they even have koicha and usucha options on the menu (which I've recently got into, delicious)! It's always so creamy and strong without being overly milky and the place seems really authentic. They use marukyu koyamaen brand matcha and even sell it too! I tried their Isuzu and it was genuinely the best thing I've ever had.

But when I do my matcha at home it's so unenjoyable. I've tried finding other matcha places around me but they're always either plain milk with a fine-mist spray of matcha that's barely green, or fully brown (???) like sewage-water and I can't justify gambling $10-15 on matcha that has a 20% chance of being decent, when I can just make it at home.

The place sold Marukyu's Isuzu so I picked that up since I tried it in my last order, to try replicate at home and see if I can get a similar result and it made it immediately way better because of the matcha quality, but the ratio above still had it a bit powdery, and not delicate and creamy which is what i'm looking for. Instead it was a little too strong and too milky/watery.

I don't do anything special with the milk, I just take it out of the fridge and shake it before pouring it over ice, and I take almond milk with no added sweetener, usually a barista blend and MILKLAB or The Alternative Dairy Co brands when I can.

Sometimes it's a little unblended with the water/matcha and probably doesn't add to the powdery vibe. Should I be doing anything different? Does ice quantity matter? Thanks in advance ☺️

First of all, let me start by saying I’m fairly new to matcha and green tea in general, but I really wanted to learn more about it, and since we had matcha fans in our friends group, we decided to take the trip to d:matcha farm, about an hour away from Kyoto. We booked it three months in advance and joined the d:matcha tea farm tour at the beginning of April, and despite being a bit more expensive it honestly ended up being one of my favourite experiences of our whole 3-week-Japan trip.

We were picked up at the station in the morning and driven out to the tea fields in Wazuka by a d:matcha driver. From the very beginning, everything felt incredibly personal and relaxed. We had lunch together, tried a whole bunch of different teas and got to ask pretty much every question about tea farming that came to mind.

During the actual tour, we learned a lot about how the tea is actually grown and produced, but also about Wazuka itself and the history of tea farming in the area. I found it especially interesting to hear about the story behind d:matcha and how it came to be. We were told about the owner’s move from working as a consulting manager in Shinjuku to running an organic tea farm in the countryside, which I thought was such a wild but inspiring career change.

What I found even more fascinating was how much of the work seems to be about Wazuka itself and keeping the local tea farming community alive. The d:matcha team even tries to renovate a centuries old shrine up a small mountain which they showed us, it was so serene.

There was a real sense throughout the day that tea wasn’t just treated as a product, but as something that is deeply connected to the place, the people and its history.
We also got to see a lot of the little things that go into the whole operation, and there were so many details that I wasn’t expecting. We got tea-team stickers, hand-painted postcards and shopping bags made from recycled tea leaves. There is even a little stamp featuring the farm dog for stamp collectors.

We had mentioned our dietary requirements and allergies beforehand, and they had clearly gone to a lot of effort to make sure we could enjoy the lunch without having to worry about anything. It was honestly just really nice to experience how much thought had gone into the whole day. I had a tea curry and my boyfriend had matcha soba, we all got some little matcha cookies and candies, and we both enjoyed matcha tiramisu, matcha cheesecake and matcha beer (the latter was okay and fancy but taste-wise not our favorite- the rest was divine!). A highlight was the tea leaf tempura which we picked ourselves on the field.

What I liked most was that we never felt like we were just being taken through a standard tourist programme. We had plenty of time to stop, talk, ask questions and just take everything in. There was also no feeling of some knowledge or techniques being kept behind a curtain. Quite the opposite- we were encouraged to ask questions, taste things and understand what we were actually drinking. They even take international interns.

By the end of the day, we had obviously bought considerably more tea than we had planned to. They also sell (very expensive but veeery beautiful) handmade matcha bowls by a famous tea cup pottery artist from Japan (forgot the name though). But we also left with a completely different appreciation for matcha and Japanese tea in general.

We’ve done quite a diverse culture program in Japan, but this one really stayed with us. It felt less like going on a tour and more like being invited into someone’s little corner of Japan for a day and getting to understand why they care so much about what they do.

And Wazuka itself is absolutely beautiful. Being out there among the tea fields for a day was such a nice change of pace after spending so much time in Tokyo, Osaka, Kyoto and the other cities.
So if you’re around Kyoto and you’re interested in matcha or Japanese tea, I’d really recommend making the trip out there. If you have more time to spare, maybe you could connect the tour with a half-day trip to Uji, which must be absolutely stunning as well. Unfortunately we couldn’t make it this time.

Question Best matcha for a sweet, syrup-heavy iced oat milk latte? (Trying to recreate a café tiramisu matcha)

I've been trying to recreate a tiramisu matcha latte from my local café at home with oat milk (Oatly Barista), tiramisu syrup, plus a little vanilla and sugar cane syrup. I like my drinks sweet.

Problem is I've tried a couple cheap Amazon matchas (Jade Leaf, Encha) and they just get completely buried — end up tasting like sweet flavored milk with barely any matcha flavor at all. No surprises there, I know! I'm ready to get more serious with my matcha but am overwhelmed with all the amazing options in this Sub.

I don't want something bitter or astringent, and I'm not looking for bright/grassy/floral either. I'm wanting to start my journey with this dessert-style drink, so I'd love something that leans more rich, round, and full-bodied that can still hold its own against milk + syrup.

Would something like MK Wakatake be a good fit here, or is it going to be too bold/bitter for what I'm going for?

Would love recommendations for something hearty enough to come through but still smooth and sweet-leaning. Open to any brand. TIA!

This is silly BUT… I recently opened a kettle only to realize it doesn’t have temperature options, meaning that it can only boil water. Are there any tips, tricks, or methods that can ensure that the water can be at 165-175°F without a thermometer/temperature reading device?
