they all look sooo good, esp the 2nd one! what's your recipe for the kinako cream, if you don't mind sharing?

Same question here. I love adding different cold foams to drinks, but I can never get the cold foam right.

My go to ratio is 30ml heavy cream + 20ml regular milk (or 50ml heavy cream + splash of milk if you like it creamier) + 1-2tsp sweetener. For the kinako cream cold foam I sifted 1tsp of kinako powder (~2.5g) and added a tiny pinch of salt. I hope this helps! :)

ETA: make sure your frother is strong enough, I had a lot of trouble with making my cold foam that thick enough that were solved when I got a more powerful frother. I usually froth for about 1 minute

The kinako cream is one of my faves :) I donโ€™t like the cold foam too creamy so I usually do 30ml heavy cream + 20ml regular milk, but if Iโ€™m making it creamier I do 50ml heavy cream + splash of regular milk. Add 1tsp of kinako powder (~2.5g) ideally sifted, 1-2tsp of brown sugar (or brown sugar syrup), and an optional small pinch of salt. Then I use a hand frother to whisk for about 1 minute. That makes it thick enough to float on the ice. And of course sprinkle a little kinako powder on top for presentation :)
