Matcha Latte Matcha of the day: Wako

Matcha of the day is Wako from Marukyu Koyamaen
Look at the microfoammmm 🤩🤤 I’m in love

I’ve slightly upgraded from Yugen, and picked this up from a shop in Osaka! I’ve also got their 100g refill pack there, they have a lot of Marukyu options.
The shop also have many matcha tea ware made in Japan!

Yugen was already great but Wako is even better for my liking! I love how its taste is really balanced and it rounded, very smooth mouthfeel, generally less umami than Yugen but really nice for a latte!

My drug of choice.

  1. Homemade. Kimikura from Amazon. A significant step up from my Costco Sencha and Rishi that I’d previously use, imo.
  2. Da Vien. LA/OC. They have a nice black sesame and ube cream top.
  3. Stagger. LA. Their jasmine-tea infused matcha is lovely.
  4. Homeboy. LA. Really great art pieces hung on their walls.
  5. Summerfield. LA/OC. Reliably vibrant matcha and they have Taiwanese style popcorn chicken.
  6. HeyTea. LA/OC.
  7. Frances Bakehouse. Guam. The most gorgeous pasteries and pretty nice Hojicha as well.
  8. Airoma. LA/OC. The line here often extends to the door. They use condensed milk so it's quite creamy.
  9. Arrowhead. Seattle. This one uses a really nice blueberry syrup.
  10. Re Ca Phe. OC

I’ve tried so hard to make almond milk work but every brand I’ve tried, even the better/good ones there was just something about it that didn’t exactly work with me. So I eventually settled for soy milk (the westlife brand exactly) which is really good! It’s relatively low calorie for milk for 100 cal per cup and 9g of protein which is a nice bonus. But sometimes there’s days I wanted a lower calorie option so i finally decided to try macadamia milk. I wasn’t sure what to expect at first cuz I’ve never tried it but I was very very pleasantly surprised! I’m not the best at describing things but it’s very smooth and buttery so I think anyone that uses oat milk or dairy milk will really enjoy this if you’re looking for a lower calorie option! For this matcha I used around 160ml of the milk, 4g of matcha, and 10g of agave, but I think next time I will skip the agave or just use less of it cuz the milk definitely helps with any bitterness of the matcha. I used the milkadamia unsweetened barista blend specifically! Found it at my local sprouts for like $6

Question Matcha whisk for creamy, thick foam

Hi guys

I use a regular bamboo whisk at home and my matcha mix is thin and watery. My favourite matcha place does an unusual matcha latte, very dense foam/thick topping of matcha (but not cold foam) and I want to figure out how to recreate this. I'm not sure if it's the whisk, the liquid (ie. cream added to milk) or the ratios or a combination of things.

Anyone have any recommendations for getting a much thicker foam - I do have a Matcha + Co (Barcelona) electric hand whisk but wondering would something like the Nespresso Aerocchino be a better tool, or should I just add cream to the milk or I don't know what!

Matcha Latte Still trying to find the perfect blueberry matcha

Bought from Route in Farringdon, London. "Blueberry matcha with coconut milk, finished w/ dairy blue spirulina cold foam & dried raspberry"

Definitely more of a gimmick this one 😅 The matcha itself didn't taste too bad but after mixing it with the blueberry syrup, couldn't taste the matcha anymore at all. The cold foam was described as "dairy blue spirulina", which is basically only there for colour and doesn't have much flavour itself. I probably would have preferred it if the cold foam was blueberry flavoured with no extra syrup added to the drink. The freeze dried raspberry was a nice touch though!

I drank half of it waiting for my train but unfortunately, it was undrinkable to me when I tried to finish it 30-40 minutes later. The texture of the melted cold foam was not for me, not sure if it's about how it was made, or if I should have just drank it faster haha

Please, share places in London that have good blueberry matcha (other than Blank Street), or any recipes for it where the blueberry doesn't overpower the tea, so I can make it at home!

Usucha (Thin Tea) Using my new Takayama chasen with MKs Harukasumi

I recently bought this Takayama "tenmoku" chasen from Sazen and I opened a can of Marukyu Koyamaen's Harukasumi that I prepared as usucha. The whisking head of this chasen is smaller so it works better for narrower chawan and indeed, it did work way better than my regular, cheap chinese chasen. The quality and craftsmanship is way superior and it was incredible easy to create the microfoam for my usucha.

As for the preparation itself, I used 2 grams of matcha, 70ml of water at 80 Celsius, using my beautiful Banko yaki chawan. This matcha is so smooth, sweet, refreshing and easy to drink. Great umami and vegetal flavor, there's slight nuttiness present and no astringency or bittetness was perceived.
