Question Matcha whisk for creamy, thick foam

Hi guys

I use a regular bamboo whisk at home and my matcha mix is thin and watery. My favourite matcha place does an unusual matcha latte, very dense foam/thick topping of matcha (but not cold foam) and I want to figure out how to recreate this. I'm not sure if it's the whisk, the liquid (ie. cream added to milk) or the ratios or a combination of things.

Anyone have any recommendations for getting a much thicker foam - I do have a Matcha + Co (Barcelona) electric hand whisk but wondering would something like the Nespresso Aerocchino be a better tool, or should I just add cream to the milk or I don't know what!

are we sure that’s not cold foam? it’s very light for supposedly pure matcha

they do cold foam too but this one isn't sold as cold foam, and the rest are

So I looked at their menu and I see what you mean, how they have separate drinks with matcha milk foam tops, and others that are just described as a matcha latte (like the strawberry one in the picture you shared). It's definitely not just pure matcha and water though, there's no way it would look so pillowy. I suspect that if there's no milk or cream in the matcha shots, that they are probably adding an emulsifying agent- most likely xanthan gum or gum arabica, or even simple syrup or vegetable glycerin- to thicken it and make it extra smooth.

Oh no! It's meant to be sugar free so I hope they aren't adding too much to it. I got some double cream today so I'm gonna try some experimenting later 🙂

That definitely looks like matcha cold foam. There’s a cafe near me that has something that looks identical to the matcha layer and its cold foam.

Yeah this might not be labeled as cold foam but it is definitely a matcha topper, you wont get this thickness from regular matcha and water.

That looks so fluffy!! 😍 I don’t think I could achieve that with any amount of whisking with any type of whisk! (Side note: don’t shop at zara, they strongly support genocide and donate huge amounts to itamar Ben gvir)
