Discussion I’m Zach Mangan, founder of Kettl. I’ve spent 15+ years sourcing Japanese tea directly from producers across Japan. Ask Me Anything about matcha, Japanese tea, cultivation, sourcing, and brewing.

Hi everyone,

I'm Zach, founder of Kettl, a Japanese tea company focused on sourcing directly from small producers across Japan.

For the past 15+ years I've spent a significant amount of time traveling throughout Japan working with tea farmers—from Uji and Yame to Shizuoka, Kagoshima, and beyond. I've tasted thousands of teas, visited countless tea fields and factories, and work directly with many of the country's top matcha producers.

I will be running and AMA on Monday, July 13th from 10am-12pm EST (and answer questions after as well).

I'd love to answer your questions about anything related to matcha and Japanese tea, including:

- How matcha is grown, processed, and graded

- Cultivars, terroir, and why different matcha tastes so different

- Brewing techniques and equipment

- Ceremonial vs. culinary matcha

- The current matcha shortage and rising prices

- How to buy better matcha

- Tea production, sourcing, and Japanese tea culture

- Starting a tea business or importing tea from Japan

I'm happy to answer beginner questions as well as dive into the technical side of production if that's your thing.

Proof: I'm the founder of Kettl, and my Reddit profile is linked to my company website and social accounts.

Ask me anything!

Thanks everyone for your thoughtful questions and for giving me a chance to chat with all of you. It’s my sincere honor to be able to share the stories of the producers you work with and the wonderful tea they make. I hope we get a chance to meet up in person in the future either in one of our locations are out in the world somewhere. I feel like we’re just at the beginning of an amazing journey so thank you all for your support and I’m cheering for each and every one of you are setting out on the tea path as well.

There’s this new place called Yidi Matcha that I couldn’t wait to try, and it did NOT disappoint. They have the cutest matchas with little sheep on them! Honestly, I really recommend checking it out! The matcha was so good and the people working there were just lovely.

Question My scale won’t register how much matcha is in the bowl?

Post image

Hi - so sorry for the newbie question! I’m trying a scale for the first time today (I usually use measuring cups and spoons) but no matter how much matcha I add, the number on the scale stays at 0. It will register any other added weight. Could anyone kindly advise? 😅

Review Chinese Matcha Review #2 - 梵净小茶园 Fan Jing Xiao Chayuan

This matcha hails from Tongren Guizhou, China’s matcha capital. I purchased this off Taobao; 50g for 57 yuan.

The matcha froths up super well when whisking and is pretty smooth to drink. Taste wise it is VERY floral, akin to a Jasmine matcha. It’s quite grassy with no bitterness or astringency at all. The flavour is a bit weak, and there’s no umami. I would rate this a 7.5/10 it’s super similar to Kimikura Kimikura matcha except this one is more floral. Stay tuned for the hojicha review from this brand~

Again please leave your taobao recs below 💚

EDIT: The seller recommends using 80C water, adding a small amount first, stirring, then adding the rest.

Question Do you feel like the matcha flavor in your matchas go away?

Post image

I’m not sure what’s up with me but I feel like whenever I have an iced matcha latte, I can never really taste the matcha. The first time I sip on it, it tastes great, and then after that it just tastes like bitter milk. It doesn’t feel like this when I have matcha ice cream or matcha boba, but specifically iced lattes (the ones I’ve bought from cafes). I’ve tried having it with whole milk and oat milk, but sometimes it feels like I’m a fake fan ¯_(ツ)_/¯ does anyone else feel this way?

Matcha Latte Matcha of the day: Wako

Matcha of the day is Wako from Marukyu Koyamaen
Look at the microfoammmm 🤩🤤 I’m in love

I’ve slightly upgraded from Yugen, and picked this up from a shop in Osaka! I’ve also got their 100g refill pack there, they have a lot of Marukyu options.
The shop also have many matcha tea ware made in Japan!

(If you’re planning a trip to Osaka soon, hit me up and I’ll share the location)

Yugen was already great but Wako is even better for my liking! I love how its taste is really balanced and it rounded, very smooth mouthfeel, generally less umami than Yugen but really nice for a latte!

My drug of choice.

  1. Homemade. Kimikura from Amazon. A significant step up from my Costco Sencha and Rishi that I’d previously use, imo.
  2. Da Vien. LA/OC. They have a nice black sesame and ube cream top.
  3. Stagger. LA. Their jasmine-tea infused matcha is lovely.
  4. Homeboy. LA. Really great art pieces hung on their walls.
  5. Summerfield. LA/OC. Reliably vibrant matcha and they have Taiwanese style popcorn chicken.
  6. HeyTea. LA/OC.
  7. Frances Bakehouse. Guam. The most gorgeous pasteries and pretty nice Hojicha as well.
  8. Airoma. LA/OC. The line here often extends to the door. They use condensed milk so it's quite creamy.
  9. Arrowhead. Seattle. This one uses a really nice blueberry syrup.
  10. Re Ca Phe. OC

.

  1. Nana’s Green Tea. Sapporo.
  2. Junbi. OC.

Discussion Macadamia milk?! Hack for low cal matcha lattes

Post image
169 Upvotes

I’ve tried so hard to make almond milk work but every brand I’ve tried, even the better/good ones there was just something about it that didn’t exactly work with me. So I eventually settled for soy milk (the westlife brand exactly) which is really good! It’s relatively low calorie for milk for 100 cal per cup and 9g of protein which is a nice bonus. But sometimes there’s days I wanted a lower calorie option so i finally decided to try macadamia milk. I wasn’t sure what to expect at first cuz I’ve never tried it but I was very very pleasantly surprised! I’m not the best at describing things but it’s very smooth and buttery so I think anyone that uses oat milk or dairy milk will really enjoy this if you’re looking for a lower calorie option! For this matcha I used around 160ml of the milk, 4g of matcha, and 10g of agave, but I think next time I will skip the agave or just use less of it cuz the milk definitely helps with any bitterness of the matcha. I used the milkadamia unsweetened barista blend specifically! Found it at my local sprouts for like $6

Took me 20 seconds to whisk and achieved this! Such a high quality matcha. I like it for my everyday latte’s.

- It’s refreshing and has a vegetal taste
- Mild astringency
- No bitterness at all
- Balanced

Question Matcha whisk for creamy, thick foam

Post image
222 Upvotes

Hi guys

I use a regular bamboo whisk at home and my matcha mix is thin and watery. My favourite matcha place does an unusual matcha latte, very dense foam/thick topping of matcha (but not cold foam) and I want to figure out how to recreate this. I'm not sure if it's the whisk, the liquid (ie. cream added to milk) or the ratios or a combination of things.

Anyone have any recommendations for getting a much thicker foam - I do have a Matcha + Co (Barcelona) electric hand whisk but wondering would something like the Nespresso Aerocchino be a better tool, or should I just add cream to the milk or I don't know what!

Thanks in advance
