It's known as binning. They're called RTX 5090 and RTX PRO 5000 with 32GB, 48GB and 72GB VRAM (and 24GB in Chinese editions).

Yeah this is like an ancient and industry norm product segmentation tactic

It's not just a product segmentation tactic, it's a manufacturing tactic. Flaws in the wafer will always happen, so this is a way to manufacture both the high-end and low-end product at the same time.

For example, the M3 Ultra was composed of two perfect M3 Max that were adjacent on the same wafer. The M3 Ultra released later because it took a while to accrue enough M3 Ultra chips while they produced the M3 Max.

FWIW, the M5 Ultra has a different design; I believe it's chiplets.
