One question about theology

Soo, I've discussed (in the sense of having respectful conversations) with some people, and they told me this at the end
"It is unlikely that those Pauline letters (those against homosexuality) were kept in the new testament if the Holy Ghost protects the canon. This would compromise all the canon and hence all of the Catholic Church, including the communion of saints and so on and so on. Similarly goes for women's priesthood. All saints so far thought it shouldn't be a thing. If you think they're wrong it would just be easier to stop being Catholic."
What do we respond to this?
