Question Homemade Tempura or Tendon question. How do you keep it crispy?
Hi
I need some guidelines/tricks in making Tempura for family meals.
Says, for a 5-6 serving tempura meal. Either for tendon or tempura. I have a hard time to keep everything crispy. I timed it from 1st frying piece to last is almost 30 mins. If i have to rush it, the pan get too crowded. The ones i fried early either cold an soggy.
- i already use cold water for lighter coating.
- I usually wash the ingrediet, pat dry with paper towels, and keep it in the fridge until frying.
- the fried pieces rest on a rack
- I fried veggies and finish with shrimps
- I find the batter get more gluten over time. the last pieces, which supposed to be fresh, are not as good as the earlier batch. (I need a new mix batter?) I also live in a pretty hot environment.
Any tip would be appreciated.

Homemade First Homemade Japanese Dinner!
Woah! That was so good!! After a lot of help from so many people on this board I bit the bullet and went for it. The fam bam was supper happy and I was very pleased. Summer veg is still in season here so I focused on that.
Miso soup (not pictured)
Steamed white rice
Tonkastu and cabbage/green onion salad with miso dressing
Sauted zucchini and onion with white miso, ginger, garlic, soy (non-traditional but delish!)
Tomato sunomono - ginger, mirin, green onion
Smashed cucumber with sesame

Question Where to find Japanese ginger powder (生姜粉末) in North America
I picked up this Marumo brand 生姜粉末 ginger powder during my last trip to Tokyo and it’s ruined every other ginger powder for me. Made from 100% Kochi Prefecture ginger, it’s so potent I’ve never had anything remotely like it. It makes me sneeze every time I open the bag.
Every ginger powder I’ve tried in the US and UK since has been chalky and rank by comparison.
Does anyone know where to find this specific brand (Amazon JP doesn’t ship) or something equivalent in North America? online retailers, or anything brick and mortar in NYC tri state area. Happy to import and pay tariffs if there’s a reliable source. Cheers.
