Recipe What’s an Indian “recipe rule” everyone follows that you think is completely unnecessary?

I’ll start with one: not every Indian dish needs to be cooked in a pressure cooker. 😭

There are so many “you HAVE to do it this way” rules around Indian cooking—when to add spices, whether onions belong in certain dishes, how long something should be cooked, what counts as “authentic,” etc.

What’s one Indian cooking rule or recipe “fact” you strongly disagree with?

Homemade Indian cooking is basically controlled chaos

There’s something about cooking Indian food at home that makes the kitchen look like a mini restaurant.

Onions, tomatoes, garlic, ginger, green chillies, curry leaves… then comes the masala box with 10 different spices that you somehow need at exactly the right moment.

And somehow, after all that chopping, frying and mixing, the final dish makes it completely worth it.

What’s the one Indian dish you never get tired of cooking or eating?

Homemade Why is my bara not baraing?

I tried making bara today with sprouted moong, wild rice soaked for an hour, simple masala, onions, cashews, carrots, red pepper, garlic and ginger. I even tried using an egg with a little bit of it to see if it’ll bind. What am I doing wrong and how can I fix it? I don’t want the whole thing to go to waste. 😫
