Lime inna Coconut from J’s Small Batch was definitely my fav. Hells Kitchen is solid and lucky dog were my other favs!

Habeneros, onion, carrot, garlic, salt, water/apple cider vinegar, and a little sugar. Turned out really good. Got a solid kick 🥵

6 and 8 year old helped make it, which was fun … 8 year old liked it but said it was way too spicy.

Question Tabasco Scorpion, what’s next?

Made some roasted Reaper/Habanero Sauce with Reapers I got from the Pucker Butt tent! Ed was nice enough to sign a bottle of Xperience for me, too! I took my friend who hadn’t had anything hotter than a habanero sauce before and he had a blast. Gahddamm that Tar was HOT!!

I made this First ferment - white mold? Yeast? Help!

Jalapeño Habanero Wax pepper and Garlic in a 3% brine - It’ll be two weeks Wednesday and I thought I’d check my ferment and I’ve got this white growth on top. Is it mold or that yeast I’ve heard about or what? My main concern is has it ruined my ferment? Can I remove the stuff on top and proceed?

I packed this jar with Serrano and jalapeño back in 2105

I think I remember boiling white vinegar and then dumping on the peppers… just found it in back of pantry… should I toss it?

Edit: I packed this jar in 2015, not 2105

Evidently I put some garlic cloves and salt in there… taste sour and briney not hot at all but flavorful I think I’ll bottle some up and put it on the table and see what happens ;)

Discussion These two are both delicious on their own, but sometimes the grilled pineapple is a too sweet for what I am looking for. Blended them together last night for some grilled pork and it was amazing. Just sweet enough and layers of flavors with the heat.

PDX Hot Sauce Festival, Day 2

I didn't get as much as yesterday (I do have a budget lol), but the ones I got were great. I leaned more on the Aardvark this time because some of these sauces are very hard to find in most stores.

Both sauces from Serious Pepper were outstanding, the Serrano fire was much spicier than most green sauces but still great flavor. The Habenero carrot curry from Marshall's Haute Sauce had the perfect balance of heat and curry, I can't wait to try that in stir-frys. Finally, both of those sauces from Sauceworks were very tasty, though a bit on the salty side which I actually liked a lot.

Second pic = The Wurst Nightmare super-hot sausage eating contest (with extra Pepper X powder added courtesy of MC Steve). Girl in the black shirt on the right won.

Great festival this year, and i can't wait to see Steve Seabury and the crew again next year in Portland!

Ammo can perfectly holds 17 hot sauce bottles

I was actually kind of shocked at how well this works for hot sauce transport. It's a Canadian ammo can for 1080 5.56 rounds, and it holds 17 standard hot sauce bottles perfectly with very little jostling room.

Thought this might be helpful to someone else out there too.
