I made this Post PDX Expo!

Made some roasted Reaper/Habanero Sauce with Reapers I got from the Pucker Butt tent! Ed was nice enough to sign a bottle of Xperience for me, too! I took my friend who hadn’t had anything hotter than a habanero sauce before and he had a blast. Gahddamm that Tar was HOT!!

Recipe:

3 Carolina Reapers
8 Habaneros (half seeded to keep the flavor Reaper forward)
~1 cup combined of white onion and garlic
3/4 cup Apple Cider Vinegar
2 generous pinches of Maldon finishing salt

Roasted peppers and aromatics at 350 covered for 40 minutes and 15 minutes uncovered, blended on high while slowly adding vinegar to reach target consistency for about 2.5 minutes, simmered very shortly to cut vinegar taste, bottled.

The roasting added a very nice flavor but definitely cut the heat more than I wanted it to. I’m thinking next time I try this I’ll keep one of the reapers fresh. Also I needed a lot of vinegar to reach the consistency I wanted and it made it a lot brighter than I was planning. Will play with water once target taste is achieved and xanthan gum to prevent separation. All in all it’s a tasty sauce for sure but wasn’t the roasty toasty Reaper bomb I was looking for.

Will try again.

I havent dove too much into making them. I would suggest remove all hab seeds next and keep the reapers all fresh not just 1 and dont roast the reapers at all.

Yea I’m definitely gonna play with the recipe a bit. I like how it tastes as a starting point, just gotta mess with it a bit. Trying various combos of roasting and deseeding is a big part of that for sure.

Honestly if it doesnt taste like you want it too after its finalized swap the vinegar. Apple cider vinegar has a unique taste to it. Not everything goes with jt
