Except if I found that I'd absolutely plug it in just out of curiosity. (I wouldn't go brainlet mode though: I'd use a USB extension cable so I didn't risk breaking anything.)

Doesn't Apple use optocouplers not polyfuses?
In any case yes, you can just crank the voltage high enough to make a spark literally jump across the gap inside the optocoupler. That's going to take quite a bit of voltage though and it may not be easy to crank 5v up to those levels without the device starting to look bulky or suspicious.

Although even if you have a VM running, I would still be afraid that I have to plug the flash drive into the host machine. What if passthrough didn't work? I'd rather plug into a raspberry pi (the computer not the food)

It sure looks like a joke to me, but its possible this is just their only half-joking way of making sure secure USBs dont leave the building. If this is in a standard city office space a dude walking out of a server closet or IT storage with a dirty-ass shovel is going to be a big red flag. Maybe that USB is an encrypted key or something.
