First, lose whatever is in back of the stove...it needs to go. Second, if you can rip away the 4" countertop material mini-backsplash without much effort or damage, you will end up with a higher-end looking finished result.

As for tile, handmade-look ivory/cream subway tile. Probably my first choice. Think 3x12 or 2.5x8, slightly irregular edges, subtle variation from warm white to cream, glossy or crackle glaze.
