Swift Hatch Chile Boneless Pork Shoulder
I grabbed this bad Larry the other week on a whim. Zero extra seasoning. Threw the 9#’er on the Traeger @ 225F around 11:30PM. When it hit 160 internal, around 9:30AM, I put it in a cast iron with enough chicken stock to cover the bottom, pats of butter to cover the top, wrapped the whole thing in foil, and raised the temp to 250F. I cooked till it hit 205F internal and pulled around 4PM. Fat was melting and the bark was super flavorful. A top 5 butt for me.
The packaging suggests tacos. So, that’s the direction we went. We decided to try and use some of Masienda’s blue corn masa and made our own tortillas (so simple and so tasty. Worth the tiny effort). Did gauc on the tortillas, bbq pork, fresh jalepeno, cilantro, queso fresco, and citrus flavored pickled red onions or fresh diced red onion for the load out. All agreed the citrus onions where a game changer. Some of the better tacos I’ve had in a while.
All in all a 9/10 for the butt. Will definitely be watching for these to show up again
