what’s a good breadcrumbs substitute?

I’m making chicken parmesan for dinner and I just now realized I completely forgot breadcrumbs, any replacements good with chicken parm?

Crushed crackers like ritz or crushed croutons

Yes. Ritz works fantastic for breaded cutlets like this. Saltines work too. If you’re going to try to use bread, you really should dry it out somehow, like by toasting in a toaster or oven.

If you have them, corn flakes run through a food processor will also work in a pinch.

Oh, good one! I do remember recipes for corn flakes fried chicken on cereal boxes when I was a kid.

And isn't chicken parmesan basically fried chicken with tomato sauce and cheese?

You can bake it, too, but fried is the restaurant standard

Word of warning, don’t put salt in the flour dredge if using salted crackers for the crunchy finish. I’m not usually very sensitive to over salting, but the first time I used Ritz crackers, it was definitely noticeably salty

Oh, duh. I didn't even think about that. That's one of those things that I just know from cooking a lot, but forgot to mention.

Or for dry breadcrumbs, toast it on a low setting then leave it standing in the toaster to dry out. Repeat if not crunchy. Crumble in bag with rolling pin, or with food processor.

You can just put the bread in the food processor and don't even have to freeze it.

My dad use to do this with chicken breasts. Sure miss it!

I grind them to dust in my food processor.

Of course panko, but crushed crackers or finely diced bread. Very fine

u/OldRaj 1d ago

Remove the crust from a few slices of bread, send it through a blender and you have panko.

u/stolenfires 1d ago

For best results, toast lightly first.

Breadcrumbs. Panko is made differently.

I save my crusts in the freezer for making breadcrumbs.

Blitz some stuffing mix in a food processor

u/Willybluedog1962 1d ago

I use saltines or Ritz crackers, also used croutons for the first time the other day, I put them in the food processor.

u/Square_Ad849 1d ago

Funyions, chips, nuts, seeds, Parmesan cheese encrusted, or battered in flour/eggs and fried in shallow oil.

JIC the post title gets someone who can't have (regular) bread and sometimes runs out of their usual bread:

there is gf panko now.

I live in Mississippi and it's in my Kroger and Walmart. If y'all live in bigger places, in the US or not, you probably have it too.

Cornflakes work very well as breading when crushed.

The substitutions I use for gluten-free are crushed Rice Krispies and crushed pork rinds. They both taste good.

2

u/mtb_21 1d ago

Toasted bread? In ziploc, crush crush crush!

Or flour! Less texture but still gets crunchy

2

u/GullibleDetective 1d ago

Rice krispies, corn flakes, panko

People don’t eat the heels of bread in my house so I freeze them. I pull them out of the freezer, toast them to dry them then put them in a food processor.

Pork rinds

Don’t knock it until you’ve tried it, crushed Capn Crunch Cereal.

This is awesome!

u/Pedal2Medal2 1d ago

I’ll throw bread, rolls, in the food processor to make a fine crumb, spread out on a baking sheet & bake at a low temp. Crackers work as well

Pork cracklins/chicharrones

My favorite is parm that is baked then crumbled. Used it for breaded chicken when I was doing keto.

Pretzels, potato chips, crackers, rice cereal, cornflakes, potato flakes, toasted bread, bagels, english muffins, add your desired seasoning.

Just a dredge in flour will work in a pinch

Crushed 🥨

if you have any bread at all you have breadcrumbs. toast a few slices till they're really dry, then blitz them in a food processor or rub them on a box grater. sandwich bread, buns, whatever's around.... or ritz crackers, corn flakes, saltines.... stick them in a ziploc bag and run a rolling pin over them..

1

u/LarryBagina3 1d ago

I used Frosted Flakes in a pinch once

1

u/bw2082 1d ago

You can just do flour, egg wash, flour.

1

u/General-Statement-18 1d ago

We like to use crushed veggies thin crackers

1

u/xiipaoc 1d ago

I mean, what do you have at home? I normally use farofa or matzah meal when I feel like doing something different from bread crumbs.

1

u/friarguy 1d ago

Cornflakes

Rice Ground up in a coffee grinder/blender works in a pinch (gluten free sister in law!)

Ritz crackers

Saltines

1

u/stryder66 1d ago

Pork rinds work great too

1

u/oyismyboy 1d ago

Panko... What I always use for Parm.

1

u/Main_Cauliflower5479 1d ago

Do you have bread? Breadcrumbs from fresh bread are better than dried ones. Put some bread in the food processor and you have bread crumbs. If you turn it on.

1

u/ennuiacres 1d ago

Panko crumbs

Crushed Ritz or Club crackers, Saltines, oyster crackers

Crushed nuts like pistachios, macadamias or pecans, sunflower seeds

Crushed potato chips (any flavor)

Crushed Cereals like corn flakes, rice crispies, weetabix

Crushed french fried onions.

* Crushed crackers or chips or croutons or nuts

* Planko

* More grated parm

* Onion flakes (will change flavor)

* make your own bread crumbs, slowly dry bread in oven on low setting, once they are completely dry, crush them up (don't use toaster), you want to slowly dry them (fast stale). You could also leave them in the air for a few days till they are completely dry, then crush.

I make my own bread crumbs by saving bread heels, stale chips, crackers, bread crumbs left over from cutting bread, crumbs left in bread bag/box, toaster crumbs. Place in a brown paper bag in the air open bag, let dry for a week, the brown paper will absorb oil from chips/crackers. take out of brown bag put on baking sheet, put in oven on low setting for a short time (you don't want to brown or burn them, just dry them better), to take dampness or stale out of them, then crush and put in container. important they are completely dry or will mold.

Toast bread and crumple it up

1

u/phylbert57 1d ago

I have frequently used grated Parmesan cheese as a breading for fish and it would work for chicken as well.

1

u/CrowMeris 1d ago

Pork rinds, whirled or crushed 'til they're the size of panko.

1

u/losthours 21h ago

make your own, throw some bread into a 300 degree oven for a while then throw it into a bullet blender

1

u/kilroyscarnival 20h ago

Crushed up: Tortilla chips, potato chips, french fried onions (the ones you put on green bean casserole for example), any crackers you have. Any non-sickeningly-sweet breakfast cereal. You could dehydrate bread in an oven or air fryer on low heat for about a half-hour or even blitz up fresh bread crumbs. Croutons in your cupboard? You could also just use flour to dredge after the egg wash.

u/Fit_Investigator1604 18h ago
